IN-N-OUT BURGER DOUBLE-DOUBLE COPYCAT RECIPE - THE FOOD HAC…

In-N-Out Burger Double-Double copycat recipe - The Food Hac… image

This legendary hamburger is a construct of simple ingredients, but until now no one has succeeded in creating a perfect clone recipe—most likely because they miss the subtleties that make this 70-year-old recipe so great. There are lots of secrets to share with you regarding the construction of this amazing burger: the crispiness of the buns, the size of the relish, the best beef to use, how to make a burger “smile”—details that, on their own, seem trivial. But put all of these tricks together in one burger, and you’ll be surprised by how much the little things matter.

Provided by Todd Wilbur

Total Time 20 minutes

Prep Time 18 minutes

Cook Time 2 minutes

Number Of Ingredients 17

1/2 cup mayonnaise
3 tablespoons ketchup
2 tablespoons finely minced white onion
1 1/2 tablespoons finely minced dill pickle relish
3/4 teaspoon granulated sugar
1/2 teaspoon white vinegar
1/4 teaspoon yellow mustard
1/4 teaspoon paprika
1/8 teaspoon salt
1 pound ground chuck, preferably 25% to 30% fat
4 small plain hamburger buns
8 slices real American cheese
4 white onion slices, not separated
4 large tomato slices
4 small handfuls of torn iceberg lettuce
Salt
Coarse grind black pepper

Steps:

  • Make the spread by combining all the ingredients in a small bowl. Set this aside until needed.
  • Make eight patties by rolling 2-ounce portions of beef into balls and forming them into 4-inch circles on wax paper.
  • Preheat two large sauté pans over medium/low to medium heat. Start at medium/low and then turn up the heat if needed after 5 minutes of pre-heating.
  • To prepare each burger, separate a hamburger bun and place the face of the top and bottom bun on one of the hot pans to toast. The buns are done when the faces are significantly darkened and crispy.
  • Cook the beef by placing two patties in the other hot pan. Add a generous sprinkling of salt and a pinch of coarse ground pepper. Cook for 2 minutes, then flip each patty over and salt and pepper each one again. The beef should be nicely seared.
  • Immediately after flipping the beef add a slice of American cheese on top of each patty. Before adding the cheese, fold about one-quarter of it over and place it onto a patty with the folded side underneath, but offset so that about 1/2-inch of the beef patty is showing where the cheese is folded. This gives you the "smile." Place the toasted top bun on top of one of the burgers and the sliced onion on the other. Cook the patties for another 2 minutes.
  • While the patties cook, prepare the bottom of the hamburger by adding about 1 1/2 tablespoons of spread onto the face of the toasted bottom bun. Stack the tomato slice on next. Pick up a small handful of lettuce and press it into the palm of your hand to compact it so that the hamburger isn't too tall, then add it on top of the tomato.
  • When the patties are done, use a spatula to stack the top patty (with the bun) onto the onion on the second patty. Use your spatula to move this whole stack off the pan and onto the bottom of the sandwich. Wrap the burger with wax paper or sandwich paper, if you like, and serve.

ECLAIR CAKE WITH CHOCOLATE GANACHE RECIPE | ALLRECIPES

Eclair Cake with Chocolate Ganache Recipe | Allrecipes image

A delicious, creamy filling on top of a light choux pastry gets glazed with a rich chocolate ganache. This dessert sounds fancy but it is so easy to make and it's a definite crowd-pleaser!

Categories     Chocolate Frosting

Total Time 2 hours 40 minutes

Prep Time 30 minutes

Cook Time 25 minutes

Yield 1 9 x 13-inch dish

Number Of Ingredients 12

1 cup water
½ cup butter
¼ teaspoon salt
1 cup all-purpose flour
4 eggs
2 cups cold heavy whipping cream
2 tablespoons confectioners' sugar
1 teaspoon vanilla extract
2 (3.5 ounce) packages instant vanilla pudding mix
2 cups cold milk
1 cup bittersweet chocolate, chopped
1 cup heavy cream

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish. Place a mixing bowl in the freezer to chill.
  • Combine the water, butter, and salt in a medium saucepan and bring to a boil over medium-high heat. Reduce the heat to medium and stir in the flour. Cook and stir until the mixture pulls away from the sides of the pan and forms a ball. Transfer the mixture to a mixing bowl and beat in the eggs, one at a time, until fully incorporated. Spread the dough evenly in the bottom of the baking dish.
  • Bake the pastry in the preheated oven until golden brown, 25 to 30 minutes. (The dough will rise and make a boat shape, but should drop as it cools.) Cool completely on wire rack.
  • Remove the chilled mixing bowl from the freezer and pour in 2 cups of cold whipping cream. Whip until the cream thickens, about 1 minute; stir in the confectioners' sugar and the vanilla extract. Continue to whip until the cream forms stiff peaks. Refrigerate the whipped cream while you mix the pudding.
  • Pour the pudding mixes and the milk into a mixing bowl and stir until creamy. Fold in the whipped cream. Spread the filling over the cooled crust and refrigerate.
  • Place the chopped chocolate in a heat-proof bowl. Bring 1 cup of cream almost to a boil in a small saucepan over medium heat. Pour the hot cream over the chocolate and allow it to soften for 1 minute. Whisk the mixture until smooth. Let the mixture cool slightly to thicken, about 10 minutes. Pour the ganache over the cream filling, spreading to cover the entire surface. Return the pan to the refrigerator and chill for at least 1 hour before serving.

TOP SECRET RECIPES | SOUP NAZI'S INDIAN MULLIGATAWNY SOUP
Elaine: "Do you need anything?"Kramer: "Oh, a hot bowl of Mulligatawny would hit the spot."Elaine: "Mulligatawny?"Kramer: "Yeah, it's an Indian soup. Simmered to perfection by one of the great soup artisans in the modern era."Elaine: "Oh. Who, the Soup Nazi?"Kramer: "He's not a Nazi. He just happens to be a little eccentric. You know, most geniuses are."Kramer was right. Al Yeganeh—otherwise known as The Soup Nazi from the Seinfeld episode that aired in 1995—is a master at the soup kettle. His popular soup creations have inspired many inferior copycats in the Big Apple, including The Soup Nutsy, which was only ten blocks away from Al's original location on 55th Street. Yeganeh's mastery shows when he combines unusual ingredients to create unique and delicious flavors in his much-raved-about soups. In this one, you might be surprised to discover pistachios and cashews among the many vegetables. It's a combination that works. I took a trip to New York and tasted about a dozen of the Soup Nazi's original creations. This one, the Indian Mulligatawny, was high on my list of favorites. After each daily trip to Soup Nazi headquarters (Soup Kitchen International), I immediately headed back to the hotel and poured samples of the soups into labeled, sealed containers, which were then chilled for the trip back home. Back in the lab, portions of the soup were rinsed through a sieve so that ingredients could be identified. I recreated four of Al's best-selling soups after that trip, including this one, which will need to simmer for 3 to 4 hours, or until the soup reduces. The soup will darken as the flavors intensify, the potatoes will begin to fall apart to thicken the soup, and the nuts will soften. If you follow these directions, you should end up with a clone that would fool even Cosmo Kramer himself. Update 2/6/18: The recipe can be improved by doubling the curry (to 2 teaspoons) and reducing the water by half (to 8 cups). Cook the soup for half the recommended time or until it's your desired thickness.  Check out my other Soup Nazi copycat recipes here. Source: Top Secret Recipes Unlocked by Todd Wilbur.
