Total Time 15 minutes

Prep Time 10 minutes

Cook Time 5 minutes

Yield 12

Number Of Ingredients 3

200g granulated sugar
5 ripe peaches , 4 stoned and chopped, 1 sliced to serve
4 teabags

Steps:

  • Tip the sugar into a pan with 250ml water. Bring to the boil slowly, ensuring the sugar is fully dissolved. Add the chopped peaches and cook until very soft. Remove from the heat, mash the peaches with a fork, and leave to infuse for 1 hr.
  • Sieve the syrup through a fine sieve into a jug, mashing the fruit to release all the liquid. The syrup will keep in the fridge for one week.
  • Put the teabags in a large heatproof jug and pour over 2 litres boiling water. Leave to steep for 4 mins, then carefully remove the teabags. Leave to cool, then transfer to the fridge until chilled.
  • Stir the peach syrup into the iced tea with some ice, or pour a little of the syrup into tall glasses and add the tea. Top up with more water, sparkling water or ice. Add peach slices to serve.

PEACH ICED TEA RECIPE | REAL SIMPLE

Peach Iced Tea Recipe | Real Simple image

This peach iced tea is the one to beat all others—thanks to its real peach flavor, not the fake, bottled kind and sweetened naturally thanks to the peaches and honey. This recipe relies on dried peaches, which you’ll rehydrate in a warm honey-infused water along with classic English breakfast tea. It’s the taste of summer in the 90s, brought back to you with even more deliciousness, that's better-for-you than the sugar-packed iced teas commonly seen. Pro tip: chop the dried peaches before steeping—they’ll release more peach flavor, and it doesn’t matter what they look like since you’ll discard them, anyway.

Provided by Ananda Eidelstein

Total Time 1 hours 30 minutes

Yield Serves 6

Number Of Ingredients 4

? cup honey
8 ounces dried peaches (1? cups)
6 bags English breakfast tea
Fresh peach slices, lemon slices, and/or mint sprigs, for serving

Steps:

  • Bring honey and 1 cup water to a boil in a small pot over medium-high, stirring occasionally, until honey dissolves, about 2 minutes. Add dried peaches and tea bags; remove from heat and steep, covered, for 5 minutes. Uncover and remove tea bags, gently squeezing to release tea; discard bags. Cover and continue to steep dried peaches for 20 to 25 minutes.
  • Remove and discard dried peaches. Transfer tea mixture to a pitcher and stir in 4 cups water. Chill for at least 1 hour before serving. Serve over ice with fresh peach slices, lemon slices, and/or mint.

  • Cook's Note: When blending hot liquids, remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.
