Steps:
- Combine milk, half-and-half, sugar, and vanilla extract in a pint-size resealable plastic bag; seal tightly.
- Put a scoop of ice, 3 tablespoons ice cream rock salt, and the bag containing the milk-cream mixture into a gallon-size resealable plastic bag; seal tightly.
- Rock the bag back and forth (do not shake) until contents thicken into ice cream, about 10 minutes. Wipe salt from the top of the pint-size bag before opening to prevent salt from getting into the ice cream.

- Preheat oven to 375º and spray mini loaf pans with cooking spray. In a resealable plastic bag, place 1 cup flour, sugar, and yeast and add warm water. Seal bag and squish together with your hands to mix. Let rest 10 minutes at room temperature. (Yeast should activate.) Add 1 cup flour, oil, and salt to the bag, then seal and squish together. Add remaining cup of flour and mix until combined. Remove from bag and knead 5 minutes until smooth. Halve dough and place in two loaf pans. Cover with a kitchen towel and let rise 30 minutes. Brush top of bread with olive oil or melted butter and bake until golden, about 30 minutes.

OVERNIGHT FINAL PROVE IN FRIDGE - SOURDOUGH COMPANION
I have done fridge proving but not using a banneton - just a cloth lined basket. I use one of those large clip-lock plastic bags for vacuum sealing clothes and blankets. Not exactly labelled as food grade but seems to be perfectly satisfactory. You do get a bit of condensation inside the bag so quite possibly it won't affect the banneton.
