Veggie & Hummus Sandwich Recipe | EatingWell image

This mile-high vegetable and hummus sandwich makes the perfect heart-healthy vegetarian lunch to go. Mix it up with different flavors of hummus and different types of vegetables depending on your mood.

2 slices whole-grain bread
3 tablespoons hummus
¼ avocado, mashed
½ cup mixed salad greens
¼ medium red bell pepper, sliced
¼ cup sliced cucumber
¼ cup shredded carrot

Steps:

  • Spread one slice of bread with hummus and the other with avocado. Fill the sandwich with greens, bell pepper, cucumber and carrot. Slice in half and serve.

This vegan-friendly and herby sandwich spread is made with 2 kinds of olives, hummus, and tahini, for a creamy side addition to your favorite sandwiches!

¼ cup pitted, drained kalamata olives
2 tbsp pitted green olives
8 oz (1 container) hummus
1 tbsp tahini
1 tsp minced fresh Italian parsley
1 tsp minced fresh rosemary
½ tsp ground coriander
? tsp garlic powder
? tsp onion powder
? tsp ground black pepper

Steps:

  • Place the Kalamata olives and green olives in a food processor, then pulse until minced.
  • Combine the minced olives, hummus, tahini, parsley, rosemary, coriander, garlic powder, onion powder, and pepper together in a bowl until thoroughly combined.
  • Cover and refrigerate for at least 2 hours or preferably overnight.
  • Use as desired and enjoy.
