Traditional Japanese Pickled, "Tsukemono". "Asazuke" is the type of "Tsukemono", which is easy, quick and fresh pickled.

Number Of Ingredients 8

9 oz Napa cabbage (250g)
4 oz English cucumber (120g) (or semi-dried cucumber )
1/4 -1/2 Unwaxed Lemon
1/2 Dried red chili pepper (without seeds)
1.5" x 3" Dashi kelp (dried kelp) (*or 1 tsp of dashi powder)
1/2 tsp Sugar
1/2 tsp Kosher or sea salt
1 tsp Chicken soup powder (*alternate of dashi kelp)

Steps:

  • Cut Napa cabbage to divide leaf parts and white parts. Cut the white parts slice into 0.5-inch pieces across the direction of the fiber. Cut leaves into 1-inch pieces.
  • Peel stripes on the English cucumber with a peeler. Cut English cucumber into 0.5-inch thick.
  • Slice 1/4 lemon thinly. (If you like lemony flavor, use 1/2 lemon.) Remove seeds as much.
  • Cut Dashi kelp into small pieces with a pair of scissors.
  • Cut dried red chili pepper into small pieces with a pair of scissors. Discard seeds. Wash your hand carefully after touching chili pepper.
  • Throw all ingredients into a freezer bag, and add seasonings. (sugar, salt, soup powder) Massage the bag 10 times.
  • Remove the air and close the freezer bag tightly, pickle them in a refrigerator. You can serve after 6 hours. It will be last for 2-3 days in the refrigerator.
  • If you can, mix around vegetables (or just flip the bag over) once.
  • When serving, drizzle soy sauce if desired.
