For a special breakfast that’s sure to impress, this easy Cinnamon Apple Pull-Apart Bread is a must. Not only is it a looker, but every fluffy crevice and golden fold of this loaf is smattered with irresistibly buttery, apple and cinnamon-brown sugar goodness. Using canned biscuits keeps this pull-apart bread recipe simple enough for bakers of all skill levels; however, it’s what you bring to the convenience dough product that yields a treat that tastes completely homemade. If you find that your melted butter begins to re-solidify slightly after you’ve stirred in the vanilla extract, no worries—just pop it back into the microwave for a few seconds and proceed with brushing the biscuit dough rounds. When arranging the stacks of dough into your pan, keep in mind that the dough will need space to rise and expand a bit as it bakes. A tangy cream cheese drizzle over the warm cinnamon-apple bread is certainly a welcome finishing touch, but it’s not essential if you’d rather dig in immediately.

Baking spray
? cup light brown sugar, packed
¼ cup granulated sugar
2 teaspoons cinnamon
½ teaspoon kosher salt
1?½ (16.3-ounce) cans Pillsbury Grands Flaky Layers biscuits
6 tablespoons unsalted butter, melted and cooled slightly
1 teaspoon vanilla extract
2 medium Granny Smith apples, peeled and cored (about 2 cups chopped)
2 tablespoons honey
2 ounces cream cheese, softened
¼ cup powdered sugar, sifted
2 tablespoons milk
¼ teaspoon vanilla extract
1 pinch kosher salt

Steps:

  • Preheat oven to 350°. Spray a 9- x 5-inch loaf pan with baking spray; set aside.
  •  Whisk together the brown sugar, granulated sugar, cinnamon, and salt in a medium bowl.
  • Cut each biscuit in half horizontally; press each piece out slightly into a thinner, ovular round. Whisk the vanilla into the melted butter. Brush both sides of each dough piece with the butter mixture, then dredge each side with the brown sugar mixture, shaking excess back into the bowl. 
  • Chop the apples into very small pieces. In a large bowl, combine the apple pieces, honey, any remaining brown sugar mixture, and any remaining butter mixture; stir well to combine. 
  • Spoon about 1 tablespoon of apple mixture onto 1 dough round; place another dough round on top of the apple mixture pressing gently. Spoon another tablespoon of apple mixture onto this biscuit. Repeat layering of apple mixture and biscuits until you’ve created a stack of 4 biscuits, ending with spooning apple mixture on top. Repeat to create 5 more (4-layer stacks). Turning each stack on it’s side transfer the stacks to the prepared loaf pan, arranging the stacks so that the sides of each touch one another and fill the pan. Make sure to arrange the stacks so that filling-topped biscuit layers are not directly lining the ends of the pan.
  • Loosely cover the pan with aluminum foil and bake at 350° for 40 minutes; remove the foil and continue baking until golden brown and cooked through, another 10 minutes. Allow the bread to cool slightly before removing from pan. Drizzle with cream cheese glaze, if desired.
  • To make the glaze, combine the cream cheese and powdered sugar in a medium bowl; beat with an electric mixer until smooth. Beat in the milk, vanilla extract, and salt until combined and smooth. Spoon the glaze over the bread before serving.

1 package (1/4 ounce) active dry yeast
1 cup warm 2% milk
1/2 cup butter, melted, divided
1 large egg, room temperature
2/3 cup plus 2 tablespoons sugar, divided
1 teaspoon salt
3 to 3-1/2 cups all-purpose flour
1 medium tart apple, peeled and chopped
1/2 cup finely chopped pecans
1/2 teaspoon ground cinnamon
ICING:
1 cup confectioners' sugar
3 to 4-1/2 teaspoons hot water
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, dissolve yeast in milk. Add 2 tablespoons butter, egg, 2 tablespoons sugar, salt and 3 cups flour; beat until smooth. Add enough remaining flour to form a stiff dough. Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Combine the apple, pecans, cinnamon and remaining sugar; set aside. Punch dough down; divide in half. Cut each half into 16 pieces. On a lightly floured surface, pat or roll out each piece into a 2-1/2-in. circle. Place 1 teaspoon apple mixture in center of circle; pinch edges together and seal, forming a ball. Dip in remaining butter., In a greased 10-in. tube pan, place 16 balls, seam side down; sprinkle with 1/4 cup apple mixture. Layer remaining balls; sprinkle with remaining apple mixture. Cover and let rise until nearly doubled, about 45 minutes. , Bake at 350° for 35-40 minutes or until golden brown. Cool for 10 minutes; remove from pan to a wire rack. Combine icing ingredients; drizzle over warm bread.

I’m told Rhys makes a mean toad-in-the-hole, and I hope they enjoy this version for years to come. In Yorkshire, I learned how real Yorkshire folk approach making a great Yorkie. They aren’t into making their batter the night before, instead they focus on getting plenty of air into the batter and achieving a hot consistent temperature in the oven. I truly love this great classic and have only ever had one issue with it: quite often, you end up with half a sausage (the toad) poking out of the Yorkshire (the hole). The bit sticking out is crispy and golden – good times – but the other half of the sausage, inside the batter, is soft, anaemic and boiled – bad times. So in the spirit of family-style sharing and creating a dish that makes everyone go ‘Oooh!’ I’m separating out the elements so you end up with amazing crispy sausages, a tray of giant Yorkshire to tear up and a wonderful onion and apple gravy. Heaven.
    2. Whisk the eggs, flour, milk and a pinch of salt in a bowl, then pour into a jug. Preheat the oven to full whack (about 240°C/475°F/gas 9). Cut your onions into 1cm thick slices, and do the same with the apples – removing the core. Put a large pan on a medium heat. Add the butter, a lug of olive oil, the onions and the apples. Pick in the leaves from 2 sprigs of rosemary. Cook for 20 minutes, stirring occasionally, until soft and golden. Remove the sauce from the heat once soft, season, and add the honey and a splash of water, if needed. Put the sausages into a sturdy roasting tray (roughly 30 x 40cm), toss with a little olive oil and cook in the oven for 20 minutes, or until golden.
    3. Transfer the cooked sausages to a pretty ovenproof dish and toss with half the apple and onion sauce. Cover with tin foil. Remove any excess fat from the roasting tray, replace with a good lug of olive oil and place on a medium heat. Add the remaining rosemary leaves and after 30 seconds, pour in the batter, then put straight into the middle of the oven with the sausages on the shelf underneath. Cook for around 8 to 10 minutes, or until the pudding is fluffy, golden and puffing up at the sides. Whatever you do, do not open the oven door.
    4. Put the pan of apples and onions back on a high heat and stir in the flour. Be brave; let it get really golden before adding the cider, stock and a couple of really good splashes of Worcestershire sauce. Let it boil and bubble away until thickened to your liking. Get your guests to the table, with their knives and forks in their hands. Put the bubbling gravy on a board in the middle of the table.
    5. Remove and uncover your sizzling sausages, then slide your Yorkshire pudding on to a nice board. This lovely dish definitely needs balancing, so serve with something green and fresh, like runner beans, greens, salad or dressed chard.
