When you're short on time but want a side with lots of flavor, stir up a pot of Spicy Black Beans. Canned black beans get their heat from a minced jalapeno pepper and lime juice.

Yield Serves 4 (serving size: about 1/2 cup)

Number Of Ingredients 7

2 teaspoons canola oil
1 cup chopped red bell pepper
1 jalapeno pepper, minced
2 tablespoons fresh lime juice
¼ teaspoon salt
1 (15-ounce) can organic no-salt-added black beans, rinsed and drained
1 tablespoon chopped fresh cilantro

Steps:

  • Heat a large nonstick skillet over medium-high heat. Add canola oil to pan; swirl to coat. Add bell pepper and minced jalapeño pepper; sauté 4 minutes. Add fresh lime juice, salt, and black beans. Cook 3 minutes or until thoroughly heated. Sprinkle with chopped fresh cilantro.

Number Of Ingredients 10

2 (15 ounce) cans black beans
2 tablespoons chopped garlic
1 medium onion, chopped fine
2 jalapeno chiles, chopped fine (seeds removed if desired)
1 teaspoon Mexican oregano
2 teaspoons ground cumin
2 teaspoons extra virgin olive oil
1/2 cup chopped fresh cilantro
2 tablespoons fresh lime juice
salt and black pepper (to taste)

Steps:

  • In sauté pan heat garlic in oil on medium heat.
  • Add onion and jalapeño as oil begins to warm.
  • Add oregano and cumin and sauté, stirring frequently, until vegetables are tender, adding a few drops of water if they begin to stick.
  • Add contents of cans of black beans and bring to a boil.
  • Reduce heat and simmer for 20-25 minutes, to allow flavors to blend.
  • Add chopped cilantro and lime juice and stir.
  • Serve.
