A few days ago, I saw these apricot mushrooms in the market. I bought two of them. One was wrapped in dumplings and the other was made cold. To be honest, the taste is really good. When I mentioned drinking, I remembered that there is still a bottle of red wine at home. Yesterday, to celebrate my new move, I opened the baby red wine and drank a small glass with my husband. Haha, don’t laugh at me. I just know that red wine can nourish Yan, so I drank a little yesterday, and I found out that wine is really not good. Although it is a little good, it tastes quite awful, so it is better to eat my side dishes. Enjoy it! 1 piece Pleurotus eryngii
1 piece Hot pepper
2 pcs Red pepper
2 tablets ginger
2 petals garlic
1 tbsp Vegetable oil
1 piece star anise
10 capsules pepper
1 teaspoon Vinegar
1/2 teaspoon salt
1 teaspoon Soy sauce
1/2 teaspoon Sugar
1/4 teaspoon Chicken Essence

Steps:

  • Wash the apricot mushrooms
  • Tear into thin strips by hand
  • Pour water in a pot, blanch the apricot mushrooms until they are cooked, and put the ripe apricot mushrooms in cold water to cool down
  • Cut green onion, ginger, garlic, and pepper into shreds and set aside
  • Put oil in the pot, fry the peppercorns until fragrant, add hot peppers, red hot peppers, garlic, and ginger to saut
  • Take out the cooled apricot mushrooms, drizzle the water and put it on a plate, pour the pepper oil into the plate, add appropriate amount of salt, soy sauce, vinegar, sugar, and chicken essence, mix evenly and serve.

It’s cheap and delicious if you use ordinary cultivated mushrooms, and suitable for any time of day: breakfast, lunch, tea, dinner or late snack. One pound of mushrooms is just right for two servings.

2 tablespoons unsalted butter, more as needed
1 pound thinly sliced portobello or cremini mushrooms
1 teaspoon chopped thyme
2 small garlic cloves, minced
Salt and pepper
Splash of sherry or Marsala (optional)
1/4 cup crème fraîche
2 thick slices country bread, for toasting
2 tablespoons chopped parsley

Steps:

  • Heat a wide skillet over high heat and add butter, swirling pan. When butter begins to sizzle, add mushrooms and cook, stirring, until lightly browned, 6 to 8 minutes.
  • Add thyme and garlic, and stir to coat. Season well with salt and pepper and continue to sauté for a minute more, then add sherry, if using. Add crème fraîche and let mixture simmer 2 minutes.
  • Meanwhile, toast bread slices until golden. Lightly butter them and place on individual warm plates.
  • Spoon mushrooms and juices over toasted bread. Top with chopped parsley.
