1 (2 pound) top round London broil
1 (28 ounce) can stewed tomatoes
garlic salt to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place the roast in a roasting pan, pour stewed tomatoes over it, and season with garlic salt.
  • Roast for 2 1/2 to 3 hours, until fork tender. Let stand for about 10 minutes at room temperature before carving and serving.

2 lb. London broil
2 large chopped onions
3 cloves minced garlic
3 cup sliced zucchini
3 cup roughly chopped tomatoes
1 tsp. sea salt
1 tsp. pepper
2 tsp. dried thyme
pinch chili pepper flakes

Steps:

  • Rub the meat with salt, pepper, thyme, and chili pepper flakes.
  • In the bottom of a crockpot, place half of garlic, onions, zucchini, and tomatoes.
  • Add meat top with remaining garlic and vegetables.
  • Pour one cup of water over mixture and cook for six hours on a medium setting.
  • Remove, slice meat, and serve.

Let sit at room temperature for an hour or refrigerate up to overnight. Preheat broiler. Brush off garlic then place steak on a sheet pan. Place pan on top rack (closest to the heating element) and broil 6 to 7 minutes, until top is lightly charred. Flip and broil 4 to 5 minutes more, until internal temperature reaches 125° (for medium rare).  Let rest 10 minutes before carving. Serve with herb butter.  In a small bowl, mix butter with herbs, lemon zest, salt, and red pepper flakes until smooth. Refrigerate until ready to use.
