1 pound sugar snap peas
2 teaspoons olive oil
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 medium lemon
Flaky salt, for serving (optional)

Steps:

  • If necessary, remove and discard the tough stem and string from 1 pound sugar snap peas.
  • Heat 2 teaspoons olive oil in a large skillet over medium-high heat until shimmering. Add the sugar snap peas, 1/4 teaspoon kosher salt, and 1/4 teaspoon black pepper. Cook, tossing occasionally, until vibrant green and crisp-tender, 3 to 4 minutes.
  • Remove the pan from the heat. Squeeze the juice from 1/2 medium lemon (about 1 1/2 tablespoons) over the snap peas and toss to coat. Sprinkle with flaky salt if desired.

1 lb. sugar snap peas
1 tbsp. olive oil
1 tsp. salt
1/2 tsp. ground black pepper
1 tbsp. butter
1 tbsp. lemon juice

Steps:

  • Snap the stem end of the peas; pull the string off of the length of the pod, and discard.
  • Heat a large skillet over medium heat. Add the oil and swirl to coat the pan. Add the snap peas, salt, and black pepper. Cook, stirring occasionally, until tender yet crisp, 3 to 5 minutes.
  • Remove from the heat. Add the butter and lemon juice and stir well to coat. Serve immediately.
