6 limes, plus 1 lime sliced, to serve
4 tbsp granulated sugar
4-5 mint sprigs
ice
350ml white rum
600ml sparking water

Steps:

  • Chop each lime into six pieces and drop them into a two-litre jug. Add the sugar and squish the lime wedges with a muddler, or the end of a rolling pin. Keep crushing to get out all the juices.
  • Pick the leaves off a mint spring and lay them on one of your hands. Clap the other hand on top to bruise the leaves ever so gently, then drop them into the jug. Repeat with the rest of the mint spring.
  • Fill up the jug about three-quarters full with ice, then add the rum. Stir with a long-handled spoon to mix all the ingredients together gently and top up with the sparkling water. Stir once more, then serve poured into tall glasses with a few extra ice cubes and lime slices. Try these 3 twists Strawberry mojito Muddle 9-10 strawberries, 2 chopped limes and 2 tbsp granulated sugar in a large jug. Bruise the leaves from 2 mint sprigs and add to the jug with a pinch of black pepper. Add lots of ice and stir in 350ml white rum and 600ml sparkling water. Blueberry mojito Put 100g blueberries, 3 chopped lemons and 2 tbsp granulated sugar in a jug and muddle. Bruise the leaves from 2 mint sprigs and add them to the jug with lots of ice. Pour over 350ml white rum and 600ml sparkling water and stir together. Mango & pineapple mojito Tip 50g pineapple pieces, 50g chopped mango, 3 chopped limes and 2 tbsp light brown sugar into a large jug and muddle together. Bruise and add the leaves from 2 mint sprigs, then top with ice. Stir in 150ml white rum, 200ml pineapple rum and 600ml sparkling water.

8-10 raspberries
1 lime, chopped into large chunks
2 tsp granulated sugar
2 mint sprigs, leaves picked
ice
100ml white rum
sparkling water, to serve

Steps:

  • Divide the raspberries, lime and sugar between two tall glasses and muddle by gently crushing with a muddler or the end of a bar spoon. The fruits should start to release their juices, which will mix with the sugar.
  • Put half the mint leaves in the palm of one of your hands, then clap the other hand on top of the leaves – this bruises them just enough to release their flavour. Drop the bruised mint leaves into one of the glasses, then repeat with the remaining mint, dropping it into the second glass.
  • Add a handful of ice to each glass, followed by the rum. Stir, then top up with sparkling water. Stir briefly until just combined, then serve.

    1. To make a rub, bash all the spices together with a good pinch of sea salt and black pepper in a pestle and mortar till fine (or use a blender). Muddle in 2 tablespoons of olive oil.
    2. Trim the fat off the pork, then rub the spice mix over the pork and marinate for 1 hour.
    3. Light your barbecue and let it calm down. Make sure you’ve got your coals high on one side and low on the other for control.
    4. Grill the pork for 5 to 10 minutes, using tongs to turn it till charred all over. Fat will render out, so keep it moving to avoid any flames.
    5. Once it’s looking beautiful, move it to the cool side of the barbecue, cover with tin foil and cook for 45 to 60 minutes, turning every 5 to 10 minutes – you should get gnarly pork that’s beautifully cooked. Check it by cutting in half and looking, or use a meat thermometer and stop when it reaches 72ºC inside – you don’t want it pink but please don’t cook the hell out of it either.
    6. Meanwhile, for the sauce, mix all the ingredients together. Taste it, and tweak the flavours until it tastes right for you. Whatever vibe you’re going for, you want to go slightly too far as it will mellow when it cooks. You don’t have to, but it’s nice to put it on the heat for a couple of minutes to help it along.
    7. For the salad, pick and finely slice all the herbs. Scrub the beetroot and shred the cabbage. Finely slice the chillies (if using).
    8. Add the herbs to a large serving bowl. Thinly slice your beets and apples (core and all), then finely slice into matchsticks (a food processor will do a fine job).
    9. Put these in the bowl, along with the chilli (if using), and add a squeeze of lemon juice.
    10. Just before serving, pour on the extra virgin olive oil, squeeze over the rest of the lemon juice and add a good pinch of pepper. Toss it all together, then have a taste and season to perfection, if needed.
    11. Brush half the sauce all over the pork so it’s shiny and dark, and cook for the final few minutes till it sizzles.
    12. Put it back on the hot side if it needs help to get sticky, but don’t let it burn.
    13. Transfer to a nice board, drizzle over the rest of the sauce and carve at the table, to eat with your lovely salad.

    6. Wipe out the pan, crack in the eggs and cook to your liking in a little olive oil, sprinkling with a pinch of chilli flakes. Trim the lettuce, click apart the leaves and place a few in each bowl.
    7. Pop the eggs on top, pick over the herbs, and sprinkle with the nuts. Serve with lime wedges for squeezing over, and extra soy, to taste.

The old-fashioned is one of the oldest mixed drinks in the cocktail canon. (Original name: whiskey cocktail, which became old-fashioned whiskey cocktail, and then just old-fashioned.)
