- . Spread and pat down the cold risotto onto a parchment lined shallow pan sized about 9x12 inch (23x30cm). . Score the squares about 3x3 inches (8x8cm). . Add your choice of large, cubed cheese (I used Havarti). . Bake into a pre-heated oven set to 325F/160C/Gas3. Position pan in the center of the oven. . Warm the risotto squares for about 15 minutes as well as making sure that the cheese is melted and not too browned. . Steps:
- In a medium-size saucepan, melt butter or margarine. Mix in flour and 1 teaspoon of salt. Stir continually until the mixture is simmering.
- Slowly pour milk into the mixture. Continue stirring over a medium heat until the mixture has thickened. Stir in cheese and mustard. Continue stirring until all of the cheese is melted and the dip is smooth. Serve warm after adding salt and pepper to taste.
