1 package (12 Oz. Size) Birthday Cake Flavored Candy Wafers
1 package (12 Oz. Size) Butter Pretzels
1 package (12 Oz. Size) Pink Candy Wafers
Nonpareils, For Decoration

Steps:

  • In a microwave-safe bowl, melt birthday cake wafers on 50% power in 30-second intervals. Stir after each interval until smooth. Dip pretzels in melted wafers. Set on a waxed paper-lined cookie sheet to set up. Melt pink wafers in the same manner. Pour into a piping bag and snip off the end. Drizzle over the pretzels. While the pink coating is still wet, sprinkle on the nonpareils. Let the coating set completely, then remove from the waxed paper.

1 1/2 cups mini real semi-sweet chocolate chips
2 tablespoons shortening

Steps:

  • Line baking sheet with waxed paper; set aside.
  • Remove candy to be dipped from refrigerator about 10 minutes before dipping. Dipping cold centers can result in cracked coating or bloom (white crystals) on coating.
  • Place chocolate chips and shortening into 2-cup glass measuring cup. Place measuring cup into bowl which contains very warm (100°F to 110°F) water reaching halfway up measuring cup. (Don't let even one drop of water mix with chocolate.) Stir mixture constantly with rubber spatula 18-22 minutes or until chocolate is melted and mixture is smooth. (Do not rush melting process.) Replace water with more very warm water, if necessary. Remove measuring cup from bowl; continue stirring 2-3 minutes or until chocolate is cooled slightly.
  • Set one candy center onto tines of fondue fork or 2 pronged fork. Completely dip center into melted chocolate. Gently tap fork against side of measuring cup to remove excess melted chocolate. Invert candy onto prepared baking sheet. Repeat with remaining centers. Place measuring cup into bowl of very warm water, if melted chocolate becomes too thick for dipping; stir until desired consistency.

  • Crush the candy canes (if they aren’t already crushed). Line a large, rimmed baking sheet with parchment paper. Melt the milk (or dark) chocolate in a heat-safe bowl in the microwave using 30-40 second intervals, stirring after each one. Two or three rounds in the microwave should be sufficient. Spread the chocolate out on the parchment in a thin, even layer. Using a large, offset spatula works well, if you have one. Put the pan in a cool place for about 10 minutes or until the chocolate is completely firm, either in the refrigerator or outside, if it’s chilly. Meanwhile, melt the white chocolate the same way, using 30-40 second intervals and stirring after each. Stir in the peppermint essential oil.
    Spread the white chocolate over the milk chocolate quickly and then sprinkle the crushed candy canes over the top. You’ll want to do these steps quickly because the cooled milk chocolate will make the white chocolate firm up quickly. You’ll want the white chocolate wet when you put the crushed candy canes on it so they’ll stick better. Let the white chocolate firm up completely (you can put the pan back in the fridge if you like) and then break it up into big pieces. The bark is ready to eat immediately or you can package it up to give away. Store it in a covered container and keep it away from heat.
