With a rich spicy glaze, this tasty bite-sized miso marinated tofu is great in rice, noodle, and salad dishes to boost flavour and add a source of protein.

400 g of Firm Tofu
2 tsp of Fresh Grated Ginger
2 Garlic Cloves
1 tbsp of Sesame Oil
1 tsp of Chilli Flakes
2 tbsp of Gluten-Free Soy Sauce
2 tbsp of Miso Paste
2 tbsp of Rice Vinegar
200 g of Wholegrain Rice
300 g of Edamame Beans
200 g of Fresh Baby Spinach
60 g of Goji Berry
2 tsp of Sesame Seeds

Steps:

  • Mix the marinade ingredients in a bowl.
  • Dice the tofu into bite-sized cubes, toss them in the marinade, and refrigerate them for at least 30 minutes.
  • Bake the marinated tofu at 180°C (355°F) for 25 minutes until golden brown.
  • Enjoy the tofu on its own or add it to a healthy salad bowl.
