2 cups flour
1 pinch salt
3 eggs
1 tablespoon oil
1 tablespoon water

Steps:

  • Mix flour and salt in a bowl.
  • Create a well with the flour and salt.
  • Whisk together the three eggs, oil and water thoroughly.
  • Add wet ingredients little by little to center of flour well, mixing gradually until dough becomes a ball.
  • Turn onto a lightly floured surface, and knead until ball is smooth and elastic.
  • Add more water if necessary.
  • Allow to rest for thirty minutes in a lightly oiled bowl, covered with plastic wrap.
  • After thirty minutes, cut dough into circles that are approximately 2 inches in diameter.
  • Place 1/2 to 3/4 tsp of filling in center of dough circle, fold over into a half moon shape, and then join edges around your finger, forming a circle shape.
  • Cook tortellini in 2-3 batches, in hot salty boiling water for 6 minutes or until firm.
  • Drain, and then add to sauce!

300 grams (10.5 oz) of baking flour
4 eggs
Salt
2 spoonfuls of olive oil
100 grams (3.5oz) of ground beef
100 grams (3.5 oz) of chopped ham
Breadcrumbs
1 litre of milk
6 tablespoons yeast
Grated nutmeg
Pepper (optional)

Steps:

  • Preparation of homemade tortellini is very simple. First, you must cook the dough for the pasta. To do this, take a bowl and add 300 grams of baking flour and half a teaspoon of salt. Then, beat 3 eggs and pour them into the bowl with a few tablespoons of olive oil. With a wooden spoon, stir all ingredients until well blended.
  • Second, find a wooden surface where you'll place the mix, as it will work better than other surfaces. You can also do it on the table or a clean counter. With your hands, knead this combination of ingredients until an elastic dough is created.
  • If you find it necessary, add a little more flour to the dough while working. If the dough is hard, take a little water but make sure it's cold. When the dough is finished, you should cover it and let it sit for fifteen minutes. After that, stretch the dough to make it very thin, being careful not to break it. Then, leave it for another fifteen minutes resting, covered it with a cloth.
  • Having prepared the pasta, it is now time for the sauce. To begin, mix 1 liter of milk, 6 tablespoons of baking powder and grated nutmeg. Also, add a pinch of salt and a little pepper according to your criteria. Boil these ingredients over medium heat, stirring constantly with a spoon. Once it starts to boil, reduce the heat to low, then remove from heat and keep the sauce for later.
  • Finally, we proceed to making the filling for the tortellini. First, mix 100 grams of ground beef with 100 grams of chopped ham, 1 egg and salt. If you want more consistency, you can add some breadcrumbs. This mixture is kneaded with the hands until you get small balls that will fill the tortellini.
  • Next, cut the dough as a square of approximately 8 cm and add the filling for each one. Make sure the ball does not cover the whole piece of pastry but only the center.Then, fold the dough into a triangle and, with a little water, wet the edges and then close them well while manually squeezing them together. Finally, fold the dough again but this time, joins the tips, simulating the characteristic shape of the original tortellini and let it dry slightly resting on a table covered with flour.
  • With the dough, sauce and filling ready, you only need to cook your pasta with water and a little salt for about 10 minutes. At serving time, dip them in sauce and sprinkle some grated cheese on top for a more intense flavor. You have prepared your homemade tortellini, Bon Appetit!
