You'd never guess it's Tofu! Peanut and ginger flavors combine to create a wonderful Asian-flavored dish that everyone will love. Serve over white rice.

1 (14 ounce) package firm tofu, cut into 3/4 inch cubes
? cup chopped green onion
1?½ teaspoons olive oil
½ teaspoon sesame oil
1 teaspoon soy sauce
2 teaspoons grated fresh ginger root
¼ cup chunky peanut butter
3 tablespoons flaked coconut
sesame seeds

Steps:

  • Heat olive oil and sesame oil in a skillet over medium-high heat. Reduce heat to medium, and cook green onions for one minute. Add tofu, and continue cooking 4 minutes more, sprinkling with soy sauce halfway through. Gently stir in the peanut butter and ginger, being careful not to break the tofu, until well incorporated.
  • Remove from heat, and toss in coconut. Transfer to a serving dish, and sprinkle with sesame seeds.

Basil Tofu Thai Recipe: Vegetarian Pad Krapow image

1 16-oz package firm or extra-firm tofu
2 Tbsp avocado oil or other cooking oil
½ large red bell pepper, sliced
¾ cup green beans, chopped into ½-inch pieces
½ medium onion, peeled and chopped
1 c. Thai holy basil
2 large eggs
Fine sea salt & fresh black pepper
3 Tbsp dark soy sauce or tamari
2 ½ tsp brown sugar
4 cloves of garlic, peeled and chopped
¼ tsp ginger, peeled and grated
½ tsp Thai chili pepper flakes, optional

Steps:

  • Remove your firm or extra-firm tofu out of the package and place the tofu block into a tofu press. Press for 15 mins, then remove.
  • Place the drained tofu into a small mixing bowl and use a fork to crumble it to the texture of ground meat.
  • Heat a large-sized cast-iron skillet over medium heat, then add your avocado oil.
  • Once the avocado oil heats, add the crumbled tofu to the pan and saute until dried, around 5 mins.
  • If you include the egg, start to cook them in a separate pan. Cook the eggs sunny side up over high heat until the edges begin to crisp.
  • In a small mixing bowl, add all of your Thai basil stir fry sauce ingredients - soy sauce or tamari, brown sugar, chopped garlic, grated ginger, and Thai chili flakes. Whisk until thoroughly combined.
  • Toss the sauce, chopped red pepper, green beans, and onions into the tofu pan. Saute together for ~ 5 mins, or until the vegan Thai stir fry veggies are cooked but still a little crispy.
  • Season the Thai basil vegetable stir fry with sea salt and freshly ground pepper.
  • Turn the stovetop heat off and stir in the Thai holy basil until it wilts in the pan.
  • Serve and enjoy your Thai veggie stir fry over steamed jasmine rice, topped with a fried egg!
