Sunday is grill-out day for my husband, Cliff, and these bacon-wrapped stuffed jalapenos are one of his specialties. We usually feature them at our annual Daytona 500 party. They disappear from the appetizer tray in no time.

Steps:
- Make a lengthwise cut in each jalapeno, about 1/8 in. deep; remove seeds. Combine the sausage and cheese; stuff into jalapenos. Wrap each with a piece of bacon; secure with toothpicks., Grill, covered, over indirect medium heat for 36-40 minutes or until a thermometer reads 160°, turning once. Grill, covered, over direct heat for 1-2 minutes or until bacon is crisp.

- Preheat oven to 400°. Cut jalapenos in half lengthwise; remove seeds and membranes. In a large saucepan, boil peppers in water for 5-10 minutes (the longer you boil the peppers, the milder they become). Drain and rinse in cold water; set aside., In a small bowl, beat the cream cheese, cheddar cheese and Worcestershire sauce until smooth. Spoon 2 teaspoonfuls into each jalapeno; sprinkle with bacon. Arrange on greased baking sheets. Bake until filling is warmed, 3-5 minutes.

- Preheat oven to 400°. Line a medium baking sheet with aluminum foil and fit with a cooling wrack. Make a cut on each pepper on one side from the stem to the tip. Use a spoon to remove seeds. In a large bowl, combine cream cheese, cheddar, Pepper Jack, and garlic. Season with salt and pepper. Fill all jalapeños with cheese mixture. In a large bowl, combine pork, maple syrup, sage, and paprika. Season with salt and pepper and stir to combine. Cover each stuffed jalapeño with about ¼ cup of pork. (It should look like an egg!) Then, wrap each jalapeño in 2 slices of bacon, using toothpicks to secure as needed. Bake until bacon is crisp and meat is cooked through, 35 to 45 minutes, depending on the size of your peppers.
