1/4 cup butter
3/4 cup flour
1/8 teaspoon salt
1/2 egg, beaten
1 -2 teaspoon sesame oil
2 tablespoons parmesan cheese, shredded
2 -4 tablespoons sesame seeds

Steps:

  • Cream the butter. Add the flour, and salt. Mix until butter is completely blended into the flour mixture.
  • Blend in the egg, parmesan cheese and sesame oil. Mix until it looks like cookie dough.
  • Press out on parchment paper in a 10 X 15 inch sheet pan until 1/4 inch thick and press in the sesame seeds. (Try to have a rectangle and equal thickness.).
  • Use a pizza cutter, and cut into 1/2 X 1/2 inch pieces and spread out on the parchment paper so they are not touching.
  • Bake at 400 degrees for 15-20 minute until golden.

1 cup (about 5 ounces) whole wheat flour
½ cup (about 2 ounces) toasted sesame seeds
¼ cup (about 1 1/2 ounces) cup fine cracked wheat
¼ tsp turmeric
¼ tsp beetroot powder
1 tsp garlic powder or to taste
2 tsp salt
4 tbsp sesame oil, plain not toasted finishing oil
6 tbsp water

Steps:

  • Add the flour, sesame seeds, cracked wheat, turmeric, beet powder, garlic powder, and salt to a mixing bowl and whisk to combine.
  • In a small bowl, mix water and oil.
  • Stir the wet ingredients into the dry ingredients.
  • Mix thoroughly. Knead any remaining bits into the dough by hand.
  • Divide the dough in half and flatten each portion into 1-inch thick squares.
  • Wrap each square in plastic and let them sit in the fridge for 30 minutes. This allows the dough to get firm before rolling.
  • Once the dough has chilled, heat the oven to 350°F.
  • On a lightly floured surface, roll out the dough to 1/8-inch thickness and cut it into small rectangles (around 1/4-inch by 3/4-inch) using a knife or pizza wheel. Alternatively, you can roll and cut the dough according to your desired shape but make sure the size is uniform is to achieve even baking.
  • Roll each piece between your palms to form think sticks (or leave the pieces as they are) and place them on a parchment-lined baking sheet.
  • Bake for 10 minutes, then flip the pieces on the other side so that the bottoms don't brown.
  • Continue baking for 5 to 10 minutes until the sticks are crisp but not brown.
  • Remove the sticks from the oven and let them cool entirely. Store in an airtight container.

You’ll need a clean surface to lay your sesame sticks. Prepare two baking sheets with silicone mats or parchment paper and preheat your oven to 400°F. Using a 1/4 teaspoon, scoop out dough. Gently roll dough into a stick and roll in sesame seeds. Roll in between your hands a few times to help press the seeds in and push in the tips of the dough so each stick looks almost like a rectangle. If you have a tapered tip, the ends will burn when you bake them. Fill the baking sheet with sesame sticks leaving at least 1/2-inch in between. Bake for 9-13 minutes, or until sesame sticks begin to show the slightest golden brown color in places. Store in an airtight container.
