The clue’s in the title with this one – it’s not the prettiest recipe in the world, but boy is it comforting and super-delicious. Let the recipe flex to what you’ve got in the house – check out the easy swaps below for ideas.

600 g ripe mixed-colour cherry tomatoes
4 cloves of garlic
200 g rosemary focaccia
1 x 660 g jar of white beans
12 higher-welfare chipolatas

Steps:

    1. Preheat the oven to 180ºC/350ºF/gas 4.
    2. Halve the cherry tomatoes, peel and finely slice the garlic, and tear the bread into bite-sized chunks.
    3. Place it all in a 30cm x 35cm roasting tray, pour in the beans and their juice, drizzle with 1 tablespoon each of olive oil and red wine vinegar, add a splash of water, and mix it all together.
    4. Quickly pinch and twist each chipolata in the middle to make it into two mini ones, then randomly dot them around your bake, lightly pressing them into the beans and tomatoes.
    5. Roast for 45 minutes, or until everything is golden, bubbling and delicious.

Filled with sausage, sweet pepper and cream cheese, these roll-ups are excellent for unexpected visitors, a cocktail party or a halftime snack. Besides being easy to make, they can be done way ahead and kept in the freezer. All you have to do is pop them into a hot oven! —Cindy Nerat, Menominee, Michigan

Yield about 6-1/2 dozen.

Number Of Ingredients 5

1 pound bulk regular or spicy pork sausage
1/2 cup diced sweet red pepper
1 green onion, chopped
1 package (8 ounces) cream cheese, cubed
2 tubes (8 ounces each) refrigerated crescent rolls

Steps:

  • In a large skillet, cook and crumble sausage over medium-high heat until no longer pink, 5-7 minutes; drain. Add pepper and green onion; cook and stir 2 minutes. Transfer to a bowl; cool 10 minutes. Stir in cream cheese until blended; cool completely., Unroll 1 can of crescent dough and separate into 4 rectangles; pinch perforations to seal. Press each rectangle to 6x4-1/2 in.; spread each with 1/3 cup filling to within 1/4 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seam to seal. Roll gently to make logs smooth. Place on a waxed paper-lined baking sheet, seam side down. Repeat with remaining crescent dough. Freeze, covered, until firm, about 1 hour., Preheat oven to 350°. Cut each log into 10 slices. Bake on parchment-lined baking sheets until golden brown, 15-18 minutes. Serve warm.
    Freeze option: Freeze pinwheels in freezer containers, separating layers with waxed paper. To use, bake frozen pinwheels as directed, increasing time by 3-5 minutes.

Press onto the bottom and up the sides of pan to form a crust; seal seams. Prepare gravy according to package directions. Stir into sausage mixture; set aside., In a small bowl, whisk eggs, milk, salt and pepper. In a large skillet, heat butter over medium heat.     2. Pierce the chillies, then toast over a gas flame or under a hot grill until black and blistered. Place in a bowl, cover with clingfilm and leave to cool. When cool enough to handle, pull off and discard the skins, then scoop out the seeds – or leave in if you want fireworks!
    3. Chop the chilli flesh and mix with the sausage, paprika and a pinch of black pepper.
    4. Sprinkle a work surface with flour. Cut the block of pastry in half and roll out into 2 strips, 50cm x 15cm each. Shape the sausage meat into 2 sausage shapes and place along the middle of each strip.
    5. Beat the egg yolks with a splash of milk, then coat the pastry either side of the sausage with the egg mixture. Fold the pastry over and press down to seal.
    6. Brush the tops of the sausage rolls with the egg wash, sprinkle with cumin seeds and sea salt. Cut into 5cm lengths and place on a non-stick baking sheet.
    7. Bake for 20 minutes, until risen, puffed and golden brown.
