This easy slow cooker roast beef recipe with potatoes, and French onion soup mix makes for an easy impressive dinner. Here's how you can make roast beef in a crock pot.

1 tbsp. neutral oil, such as canola or vegetable
2 lb. boneless chuck roast, cut into medium-sized cubes
1 (12-oz.) can IPA beer
3 c. low-sodium beef stock or broth
1 tbsp. beef bouillon base, such as Better Than Bouillon
1 medium carrot, cut into rounds
1 medium yellow onion, chopped
2 small Yukon Gold potatoes, cut into 1" chunks
2 sprigs fresh thyme
1 packet onion soup mix
Kosher salt
Freshly ground black pepper

Steps:

  • In a large skillet, heat oil over medium-high heat until it shimmers. Add half the beef and sear until browned on all sides.  Transfer to a plate and repeat with the other half of the beef. Once all the beef is seared, add the beer and deglaze, scraping up all the browned bits with a wooden spoon. Cook for about 2 minutes, then remove skillet from heat.
  • Into the slow cooker, add a small amount of beef stock (about ¼ cup), then add the bouillon and stir until dissolved. Add the seared beef and all the dripping from the plate, along with the carrots, onions, potatoes, deglazed beer from the skillet, the remaining beef stock, thyme, and onion soup mix. Give it a gentle stir to make sure everything is mixed.
  • Set the slow cooker to low and let cook until beef and veggies are tender, about 8 to 9 hours. 
  • Discard the thyme sprigs and season with salt and pepper to taste.

3 pound(s) beef roast
3 pound(s) pork roast
1 pound(s) carrots, peeled and cut into chunks (or use baby carrots)
4 - stalks celery, cut into chunks
4 - potatoes, washed, cut into chunks (peel if you wish)
8 ounce(s) fresh mushrooms (I used baby bellas)
3 medium onions, peeled, cut into chunks
1 package(s) onion soup mix
1 package(s) brown gravy mix
1 tablespoon(s) olive oil
3 tablespoon(s) butter
- salt
- pepper

Steps:

  • Melt butter in the olive oil in a frying pan over medium to medium-high heat. Cut your roasts in half so you have four chunks of meat. Salt and pepper each chunk as you wish. When the frying pan is hot, brown the meat on all sides. Set aside.
  • Put your prepared vegetables in your slow cooker.
  • Lay the browned meat on top. You DO NOT need to add water, as the meat and the vegetables create their own wonderful juice. I used a 6-quart cooker and it was quite full. If you have a smaller one, adjust your ingredients so it all fits.
  • Cook on high for 4-6 hours. If you are going to be gone much longer, you may want to use a lower setting - use what works for your slow cooker.
  • When done to your liking, remove the meat and vegetables to a platter or bowl.
  • Put the onion soup mix and brown gravy mix in a medium saucepan. Whisk in the juices from the slow cooker and warm on medium heat, stirring occasionally, until it comes to a boil. Lower to a simmer and cook, stirring constantly, for at least one minute. Depending on how soon you plan to eat, you may want to cook the juices a bit longer in order to hydrate the onions from the onion soup mix. If you aren't eating right away, they will hydrate when you put them back in the slow cooker. Return your meat and veggies to the slow cooker and pour the gravy over it.
  • You have a wonderful-smelling and wonderful-tasting meal ready for your enjoyment!
