SHRIMP QUESADILLA RECIPE | FOOD NETWORK

Number Of Ingredients 8

8 ounces pepper jack cheese
Six 16-20 count unpeeled shrimp, deveined
Olive oil, for drizzling 
Kosher salt and freshly ground black pepper 
2 tablespoons mayonnaise 
2 large flour tortillas 
1/4 cup chopped roasted red pepper 
1/4 cup chopped fresh cilantro leaves 

Steps:

  • Place cheese in freezer for around 45 minutes.
  • Meanwhile, preheat oven to 400 degrees F.
  • Drizzle shrimp with olive oil in a large bowl. Sprinkle with salt and pepper and toss to coat. Spread on a baking sheet and bake, rotating once, until just cooked through, 7 to 9 minutes.
  • When shrimp are cool enough to handle, remove and discard peels and tails. Cut shrimp into thirds.
  • Shred cheese using the large holes on a box grater.
  • Spread 1 tablespoon mayonnaise on one side of a tortilla. Place tortilla, mayo-side down, in a large skillet. Sprinkle half the cheese evenly over the top of the entire tortilla, then turn heat on to medium-low heat. While pan is heating, sprinkle half of the chopped shrimp, half of the roasted red peppers and half of the cilantro on one half of the tortilla, leaving the other half with just cheese. Let quesadilla cook, checking that the bottom of the tortilla doesn't burn, until cheese is mostly melted, 3 to 5 minutes. Remove skillet from heat and carefully fold the quesadilla in half like a book, folding the cheese side over the toppings. Place quesadilla on a plate and let rest 5 minutes. Repeat with second tortilla and ingredients. Cut into wedges before serving.

Super easy, cheap and quick to make, quesadillas are what you need when you're so hungry you could eat your own face. You've probably got all the ingredients for these veggie quesadillas in your cupboard and fridge right now. Each serving provides 882 kcal, 36g protein, 88g carbohydrates (of which 8g sugars), 40.5g fat (of which 19g saturates), 11g fibre and 2.8g salt.

Number Of Ingredients 9

1½ tbsp olive oil
4 spring onions, thinly sliced
400g tin mixed beans in water, drained
1 tbsp chipotle paste
4 flour tortillas
100g/3½oz cheddar, grated
4 tbsp soured cream (optional)
1 lime, juice only (optional)
handful fresh coriander, to garnish (optional)

Steps:

  • Heat the oven to 120C/100C Fan/Gas ½.
  • Heat ½ tablespoon of oil in a frying pan over a medium heat. Add the spring onions and cook for 2 minutes, until beginning to soften. Add the beans and the chipotle paste stir well. Using a potato masher or fork, crush the beans to a rough purée. Transfer the beans to a plate and wipe out the pan.
  • Add half a tablespoon of the oil to the pan over a low heat and gently wipe with a piece of kitchen paper. Put one tortilla in the pan and top with an even layer of grated cheese. Spoon over half the bean mixture and top with another even layer of cheese (the cheese acts as glue). Place a tortilla on top of the cheese, then press down with a spatula and cook for 3–4 minutes, or until the underside is golden. Flip over the quesadilla and cook for a further 3–4 minutes.
  • Place on a baking tray and transfer to the oven to keep warm. Repeat step three with the remaining ingredients.
  • If making the sour cream dip, mix the soured cream and lime juice together in a bowl. Cut the quesadillas into quarters and drizzle over the lime soured cream. Sprinkle with the coriander, if using, and serve.

  • Preheat oven to 425°. In a large skillet over medium heat, heat olive oil. Add bell peppers and onion and cook until soft, about 5 minutes. Remove from skillet and set aside. Add ground beef to skillet and cook, breaking up meat with a wooden spoon, until beef is no longer pink, about 5 minutes. Drain fat, then stir in cumin, chili powder, paprika and season with salt and pepper.  On a half sheet, place 6 tortillas around the edges of the pan so that about half of each tortilla hangs over side. Place another tortilla in the center to cover pan completely, then top with ground beef, pepper and onion mixture, cheeses, and green onions.  Place another tortilla in the center (on top of all fillings), then fold each tortilla towards center. Place a second baking sheet on top of tortillas (to help quesadilla hold is shape!) and bake until tortillas are beginning to turn crispy, about 20 minutes. Remove baking sheet from on top and continue baking until tortillas are golden and crispy, about 15 minutes more. Slice into rectangles and serve warm with sour cream and pico de gallo.
