Popcorn shrimp make a nice appetizer or side dish for both adults and children. Best served with cocktail sauce.

1 quart vegetable oil for frying
1 cup all-purpose flour
1 egg
½ cup milk
1 cup dry bread crumbs
1 ¼ teaspoons salt
½ teaspoon dried basil
½ teaspoon dried parsley
⅛ teaspoon garlic powder
⅛ teaspoon onion powder
24 uncooked medium shrimp, peeled and deveined

Steps:

  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Place flour in a bowl. Whisk egg and milk in another bowl. Combine bread crumbs, salt, basil, parsley, garlic powder, and onion powder in a third bowl.
  • Gently press shrimp into flour to coat and shake off excess. Dip into egg mixture and press into bread crumbs. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place the breaded shrimp onto a plate while breading the rest; do not stack.
  • Deep fry breaded shrimp in preheated oil until golden brown, 3 to 4 minutes. Transfer shrimp to a paper towel-lined platter to drain.

3 tablespoons olive oil
1 medium onion, finely chopped
6 garlic cloves, minced
2 pounds uncooked shell-on shrimp (16-20 per pound)
2 envelopes sazon with coriander and annatto
2 teaspoons garlic salt
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon paprika
1 bay leaf
1 bottle (12 ounces) beer or 1-1/2 cups chicken broth
1 teaspoon lemon juice
1/4 cup ketchup
3 tablespoons chopped fresh parsley
Hot cooked rice

Steps:

  • In a Dutch oven, heat oil over medium-high heat. Add onion; cook and stir until tender, 4-5 minutes. Add garlic and shrimp; cook 1 minute longer. Stir in seasonings. Add beer and lemon juice; bring to a boil. Reduce heat. Simmer, uncovered, until shrimp turn pink, 10-15 minutes. Stir in ketchup and parsley; discard bay leaf. Serve with rice.

Drain pineapple, reserving the juice in a 2-cup measuring cup; set pineapple aside. Add enough water to the juice to measure 1-1/3 cups; stir in vinegar, soy sauce and ketchup. , In a large bowl, combine brown sugar and cornstarch. Stir in pineapple juice mixture until smooth. Gradually add to the skillet. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in chicken and pineapple; heat through. If desired, serve with rice and sprinkle with green onions and sesame seeds.
