This recipe calls for a batter-like dough and is baked on a pizzelle iron. Powdered sugar adds an elegant touch. In the Italian version, vanilla is replaced by anise. Chocolate may also be used.

3 eggs
¾ cup white sugar
½ cup butter, melted
1 tablespoon vanilla extract
1?¾ cups all-purpose flour
2 teaspoons baking powder

Steps:

  • In a large bowl, beat eggs and sugar until thick. Stir in the melted butter and vanilla. Sift together the flour and baking powder, and blend into the batter until smooth.
  • Heat the pizzelle iron, and brush with oil. Drop about one tablespoon of batter onto each circle on the iron. You may need to experiment with the amount of batter and baking time depending on the iron. Bake for 20 to 45 seconds, or until steam is no longer coming out of the iron. Carefully remove cookies from the iron. Cool completely before storing in an airtight container.
  • For chocolate pizzelles, add 1/4 cup cocoa sifted together with flour and baking powder, 1/4 cup more sugar and 1/4 teaspoon more baking powder. I find that for the chocolate mixture, the iron must be well oiled to start and then brush on more as needed.

Easy, classic Italian pizzelle cookies recipe, homemade from scratch with simple ingredients. Beautiful, thin and crispy with aromatic vanilla and anise extracts.

Number Of Ingredients 7

3 Eggs (Large, Room temperature)
1/2 cup Granulated sugar
1/4 cup Oil
1 tsp Vanilla extract
1/2-1 tsp Anise extract (Adjust according to your preference as it is a strong extract. )
1 1/4 cups All-purpose flour (Sifted)
3/4 tsp Baking powder

Steps:

  • In a large mixing bowl, add eggs and mix until frothy. This takes about 2-3 minutes.
  • Add sugar and mix until slightly thickened. This takes about 3-4 minutes.
  • Add oil, vanilla extract, anise extract and mix until combined.
  • Add sifted flour, baking powder and mix until smooth. The mixture will be thick and sticky. Don't add any liquid to thin it out. You can only add a light splash of water, only if the mixture is not combining properly.
  • Drop 1 tablespoon of batter onto a hot pizzelle maker that's been lightly greased with oil.
  • Close lid and cook for about 30-45 seconds or until light golden brown.
  • Remove from the pizzelle press and transfer to a cooling rack. They will still be slightly soft and pliable at this point. Once they cool completely, they will become crispy.
  • Enjoy as is or with a dusting powdered sugar.
