1 cup 2% milk
2 cups vanilla ice cream
1/2 teaspoon peppermint extract
1/2 cup crushed peppermint candies, divided
Sweetened whipped cream

Steps:

  • In a blender, combine milk, ice cream and extract; cover and process for 30 seconds or until smooth. Stir in 1/4 cup peppermint candies. Pour into chilled glasses. Top with whipped cream and remaining peppermint candies; serve immediately.

semisweet chocolate, chopped

white chocolate, chopped

1/2 tsp.

peppermint extract

candy canes, crushed 

Steps:

  • Line a baking sheet with parchment paper. Fill the bottom of a large pot with 3” water and bring to simmer over medium heat. Reduce heat to low, then place a large heatproof bowl on top. Add semi-sweet chocolate and stir occasionally until chocolate has melted. Stir in extract. Pour into prepared baking sheet and spread into an even layer with an offset spatula. Refrigerate until set, about 20 minutes.  Over the same pot of barely simmering water, place another large heatproof bowl. Add white chocolate and stir until melted. Pour over set semi-sweet chocolate then top immediately with candy canes. Refrigerate until set, about 20 minutes.

Gradually add the powdered sugar, about 1/4 cup at a time, and beat until stiff shiny peaks form, 8 to 10 minutes. Using a thin pastry brush, make 5 to 6 stripes of gel food coloring inside a pastry bag fitted with a large star tip. Carefully spoon the meringue into the bag. Pipe 2-inch meringues about 1 inch apart on the prepared pans. Bake the meringues for 1 hour, then turn off the oven and leave the meringues inside for 2 more hours to cool and dry.
