1 kg Chicken
1 tbsp pepper powder
2 tbsp lemon juice
½ tsp salt
2 medium-sized onion (sliced)
3 green chillies (slit)
1 tbsp ginger garlic paste
1 tomato (chopped)
1 tsp turmeric powder
1 tbsp coriander powder
1 tbsp garam masala
3 tbsp peppercorns (crushed )
2 sprigs of curry leaves
Oil (as required)
Salt (as required)
Salt as required

Steps:

  • Take a bowl and add the chicken pieces. Add lemon juice, salt and pepper. Let it marinate for 30 minutes.
  • Take a pan and heat the oil on medium flame. Then add curry leaves. As they splutter, add the sliced onions. Sprinkle a little salt and sauté the onions until they turn golden brown.
  • Add the green chillies and ginger-garlic paste to the onions. Sauté until the rawness of the paste subsides.
  • Add turmeric powder, coriander powder, garam masala, crushed pepper on the onion mixture. Sauté and mix well. After a minute of cooking, add the chicken pieces. Cover with a lid and let it cook for 10-15 minutes.
  • Once all the water evaporates, roast the chicken for a few more minutes. Then add curry leaves, crushed pepper, and oil. Sauté for a minute. Then switch off the stove and let the chicken rest for a few minutes. Serve hot with rice or roti.

2 teaspoons butter
1 tablespoon ground black pepper, divided
1 skinless, boneless chicken breast half
1 tablespoon fresh lemon juice

Steps:

  • Melt butter in a small skillet. Pepper the skillet with 1/2 tablespoon of the pepper, then lay the chicken breast onto the pepper. Squeeze fresh lemon juice onto the chicken, then season with the remaining pepper.
  • Saute chicken breast for about 5 to 7 minutes, then turn to the other side, squeeze lemon juice onto the other side and saute for another 5 to 7 minutes (or until chicken is cooked through and juices run clear).

Whenever we eat out Chinese, specially a quick one such as Panda Express... no matter how much Vishal adores their orange chicken, he will always ask for a side of black pepper chicken in panda bowl. Few years ago, I started messing with these flavor at home. Now a days, we often make black pepper chicken at home! Actually, I even use the black pepper sauce to make some vegetarian black pepper tofu too!

What is Silken Chicken

You know the best part? In Black Pepper Chicken, chicken is not deep fried rather marinated and pouched which is called "silken-ed" in Asian cuisine. It takes almost same time as battered and fried chicken (staple Chinese take-out cooking technique) but chicken comes out super moist.. almost soft like silk. I think that's why the name.

To make Silken chicken, I marinate the chicken in easy-to-find pantry ingredients such as soy sauce, egg white, corn starch and some seasoning. After a brief marination, I pouch the chicken in hot boiling water which seals the egg-based marinade onto the chicken, in 10-12 minutes chicken pieces look like silk and are silk moist tender.
