Macaroni cheese recipe with added vegetables, suitable for babies from 9 months

Broccoli 50g
cauliflower 50g
macaroni 100g
Butter 25g
plain white flour 25g
whole bay leaf 1
skimmed milk 275ml
cheddar cheese 50g, grated, plus extra for topping
mustard powder 1/2 tsp

Steps:

  • Preheat oven to 200°C/gas mark 6. Steam the broccoli and cauliflower until tender but still firm, cut into small pieces and set aside.
  • Put the macaroni in a saucepan of boiling water and simmer until cooked for 8 minutes, or according to packet instructions.
  • While the pasta is cooking, make the cheese sauce. Melt the butter in a saucepan and stir in the flour, till it starts to bubble slightly. Add the bay leaf, turn up and heat and pour in a quarter of the milk, stirring all the time. As the sauce start to thicken, add more milk, stirring all the while, repeating until milk is all used up. Then stir in the grated cheddar cheese and mustard powder.
  • Drain the pasta well, mix with the cheese sauce and steamed vegetables.
  • Sprinkle with the remaining cheddar cheese (to cover), and put in an oven-proof dish. Place in oven for around 25 minutes, until top turns golden-brown. Chop to the right size for your baby before serving.

1 (8 ounce) box elbow macaroni
¼ cup butter
¼ cup all-purpose flour
½ teaspoon salt
ground black pepper to taste
2 cups milk
2 cups shredded Cheddar cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
  • Melt butter in a saucepan over medium heat; stir in flour, salt, and pepper until smooth, about 5 minutes. Slowly pour milk into butter-flour mixture while continuously stirring until mixture is smooth and bubbling, about 5 minutes. Add Cheddar cheese to milk mixture and stir until cheese is melted, 2 to 4 minutes.
  • Fold macaroni into cheese sauce until coated.
