How to make a thousand leaf cake - Allmexrecipes image

A classic French recipe, surprisingly easy to make with commercial puff pastry and homemade custard ahead of time. This cake is known in France as "mille feuille".

Yield  5 

Number Of Ingredients 7

500 grams of puff pastry
1 tablespoon of oil, to grease
2 teaspoons of standard sugar
250 milliliters of vanilla flavor pastry cream
75 grams of icing sugar
2 tablespoons of water
1/2 teaspoon of natural cocoa

Steps:

  • Preheat oven to 200ºC (400ºF).
  • Line a baking sheet with wax paper, and varnish with a little oil. Spread the paste on the greased paper, and varnish the surface with a little water. Sprinkle with 1 teaspoon of sugar. Cover completely with another piece of wax paper and lay another baking sheet on top.
  • Bake in the preheated oven for 15 minutes. Remove from the oven and carefully remove the waxed paper that covers the pasta. Flip the pasta over, then sprinkle with 1 teaspoon of sugar. Cover again with the same wax paper and place the baking sheet on top.
  • Return to the oven and bake for 10 more minutes.
  • Very carefully, place the puff pastry on a cutting board. Cut the pasta into 3 strips of the same size. To make it easier for you to cut the cake before serving, cut 2 of the strips into 5 equal pieces. (This last step is optional, but it will make your life easier when serving).
  • Spread half of the pastry cream over the entire piece of puff pastry (the layer of cream should be about 1 centimeter thick). Clean the edges by passing a knife through the sides. Place a second layer of puff pastry on the pastry cream (whole or in pieces) and spread the rest of the pastry cream on top. Finally, cover with the last layer of puff pastry (whole or in pieces).
  • Prepare the bitumen by mixing the icing sugar very well with 1 1/2 tablespoons of water, until it has a uniform and smooth consistency. Besides, mix the cocoa with a few drops of water, moving until you have a homogeneous paste. Put the cocoa paste in a plastic bag and make a small hole in one corner of the bag (like a pastry bag).
  • Spread a very thin layer of bitumen on the thousand sheet cake as quickly as possible to prevent it from hardening. Immediately after, form 5 thin horizontal lines of cocoa on the cake (one line per piece). Use a toothpick to cut through the cocoa lines to form a decorative design.
  • Refrigerate until the bitumen hardens before cutting and serving.

4 ounces milk chocolate, chopped
20 ivy, black walnut, or rose leaves, about 2 1/2 inches long

Steps:

  • Wash leaves, and dry thoroughly. Set aside on a baking sheet lined with parchment paper. Place chopped chocolate in a medium heat-proof bowl, then place the bowl over a pan of gently simmering water. Stir occasionally until chocolate is melted. Remove from heat.
  • Using a soft 1/4-inch pastry brush, coat the underside of each leaf with a thin layer of chocolate. Place the leaves into the refrigerator until firm, about 15 minutes.
  • Brush the leaves with a second layer of chocolate, and chill again. When firm, carefully peel the leaf from the chocolate. Set chocolate leaves on baking sheet, and store in the refrigerator until ready to use.
