Authentic Masala Chai Recipe - Spiced Indian Milk Tea image

Indian masala chai is a delicious and sweet beverage made with milk, black tea, and several spices. This tea is also healthy, which is a good reason to start sipping it frequently!

3 cups water
3 cups whole milk (or almond, cashew, soy, oat or another plant-based milk)
5 tbsp loose leaf black tea (Assam)
1 inch piece ginger (sliced)
10 cloves (whole)
15 green cardamom pods
1 1/2 cinnamon sticks ((about 2 inches))
5 - 10 tsp teaspoons of brown sugar
15 black peppercorns
5 star anises
1/2 tsp fennel seeds

Steps:

  • Crack the cardamom pods, cloves, and peppercorns (if you are using them) and put them in a saucepan or teapot. Add thinly sliced ginger, cinnamon sticks, and black tea. Add star anise and fennel seeds if you want to use them. Add the water.
  • Bring to a low boil and cover. Steep on low heat for at least 10 minutes. If you want a stronger infusion, keep the chai on very low heat for an hour or two.
  • Add milk and sugar. Stir it while heating until it’s simmering hot again. Simmer for a few minutes to allow the milk to bring out the oil from the spices.
  • Pour into mugs or glasses through a strainer and enjoy!

The directions on my chai tea bags say, "steep 3-5 minutes, then add milk." The result is not very good; it's watery and not spicy at all. This recipe is my "rescue" for chai tea bags. It's not exactly chai like you get in India, but it's closer at least!

1 chai tea bag (I use Trader Joe's)
1 cup water
1/2 cup nonfat milk (whichever milk you prefer, I just like skim)
1/2 teaspoon honey (optional) or 1/2 teaspoon sugar (optional)

Steps:

  • Place water and tea bag in a small saucepan over high heat.
  • Bring to a boil, then lower heat and simmer for about ten minutes, until the water is reduced by half. If less than 1/2 cup of water remains after ten minutes, just top up with more water.
  • Remove tea bag and stir in milk and honey or sugar. Allow the chai to just return to a boil, then pour into a mug and serve.
  • Note that if you let chai sit for too long, it will form a "skin." This is normal, but if you'd rather not have it, periodically stir your chai while you enjoy it.
