Crisp, nutty pecans, and oh–so sweet honey, finished with a fine layer of sugar and coarse kosher salt.

1 pound Pecan Halves
1/3 cup Honey
2 tablespoon Granulated Sugar
2 teaspoon Coarse Kosher Salt

Steps:

  • Preheat oven to 350 degrees F (180 degrees C) and line a baking sheet with parchment paper.
  • In a microwave safe dish, warm Honey (1/3 cup) in microwave for 20 to 30 seconds to loosen it up.
  • Place Pecan Halves (1 pound) in a medium mixing bowl and pour warmed honey over pecans. Toss to coat pecans well.
  • Pour pecans out onto prepared baking sheet, separating pecans with a fork until they are in a single layer. Place in preheated oven and bake for 6 minutes.
  • Remove from oven, stir and re-spread out into an even layer. Return to oven for an additional 6 minutes.
  • Remove from oven and let sit for about 5 minutes - make sure the pecans are not layered and that they are, for the most part, not sticking to each other. If need be, separate with a fork.
  • After 5 minutes, sprinkle with Granulated Sugar (2 tablespoon) and Coarse Kosher Salt (2 teaspoon) and let cool for about 30 to 45 minutes.
  • Once cooled, break apart any large pieces and transfer to an airtight container. Store at room temperature for several days.

3 cups shelled pecans
3 Tablespoons honey (local to you is best)
1/2 teaspoon salt plus extra for sprinkling

Steps:

  • Preheat oven to 250 degrees.
  • Spray a heavy, rimmed cookie sheet with cooking oil spray. Place pecans on cookie sheet in a single layer.
  • Bake pecans for 7 minutes. Watch closely - if nuts are older it will take less time. Remove from oven and put nuts in a medium sized mixing bowl. Add 3 Tablespoons honey and stir to coat pecans.
  • Add 1/2 teaspoon salt and stir again.
  • Spray cookie sheet again and put nuts on the sheet in single layer. Bake at 220-250 for 1 1/2 to 2 hours, stirring one time. I may take less time if nuts are old.
  • Remove from oven and sprinkle with a wee bit of salt. Separate any nuts that have clumped. Cool and store in air tight container. Nuts will keep fresh for at least a week. Perfect hostess gift or for holiday giving.
