1 beef sirloin tip roast (3 pounds)
2 garlic cloves, minced
1 to 2 tablespoons coarsely ground pepper
1/4 cup reduced-sodium soy sauce
3 tablespoons balsamic vinegar
1 tablespoon Worcestershire sauce
2 teaspoons ground mustard
2 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Rub roast with garlic and pepper; place in a 3-qt. slow cooker. Mix soy sauce, vinegar, Worcestershire sauce and mustard; pour over roast. Cook, covered, on low until tender, 3-1/2 to 4 hours., Remove roast; keep warm. Strain cooking juices into a small saucepan; skim fat. Mix cornstarch and water until smooth; stir into cooking juices. Bring to a boil; cook and stir until thickened, 1-2 minutes. Cut roast into slices; serve with gravy.

Learn how to make homemade gravy from scratch for Thanksgiving. This easy brown gravy recipe with meat drippings, flour, broth is ready in 15 minutes.

2 tbsp Butter (Unsalted, Divided)
4 tbsp Beef drippings
4 tbsp All-purpose flour
2 cups Beef broth (Low sodium)
Salt (To taste)
Pepper (To tast)

Steps:

  • Heat 1 tbsp butter and beef drippings in a non-stick saucepan over medium high heat. 
  • Add flour and mix continue stirring until the mixture golden brown.
  • Gradually, add broth (1/2 cup at a time) while constantly mixing to prevent formation of any lumps. 
  • Continue mixing until smooth. If you ever get lumps, you can get use a hand-held blender to get rid of them. 
  • Add salt and pepper and let it simmer for a few more minutes until it thickens to your preference. 
  • Stir in 1 tbsp butter for a shiny finish and serve immediately. Enjoy!

The shiny side of the foil should be up. Sprinkle the roast on all sides with salt and pepper and place it in the center of the foil. Spread the onion slices over the top of the roast and pour the vinegar around it. Bring the ends of the foil together and fold several times, and then fold the ends together to completely enclose the roast. Pour about 1 inch of water into the pan around the foil-wrapped roast. Bake until the meat is fork tender and brown, 3 to 4 hours. Check the water level in the pan regularly during cooking and replenish it if necessary. If any juice seeps from the foil seals during roasting, save it to use in making the gravy. When the roast is done, remove the package from the baking pan and let it cool for a few minutes.
