HOW TO MAKE CANDIED FRUIT | JUST A PINCH RECIPES

How to Make Candied Fruit | Just A Pinch Recipes image

I was curious about how to candy fruit and stumbled onto a whole new area that I had not known before. I am looking forward to trying it out! If you cannot find the fruit already candied... or you want to do your own combination of fruits for fruit cake or sugar plums or simply for gift giving, this method sounds super easy. But you don't have to stop with fruit: slivers of candied carrot make a wonderful garnish for carrot cakes. How about making your own crystallized ginger? It certainly sounds simple enough!! Once you get the hang of it, you can even candy your own yams!! Enjoy

Number Of Ingredients 4

1 cup(s) sugar
1 cup(s) honey
1 1/2 cup(s) water
- heavy saucepan

Steps:

  • Prepare fruit. Cut pineapple, apricots and watermelon rind into small pieces; chop cherries in half; remove white pith from lemon, orange or grapefruit peel and cut into strips or small pieces. Depending on your finished use you may also simply cut your fruit into 1/4 inch (aprox.) slices.
  • Combine 1 cup sugar, 1 cup honey and 1-1/2 cups water in heavy saucepan.
  • Boil over medium heat and cook, stirring constantly, until mixture reaches 235 degrees F on candy thermometer.
  • Thread Stage 230° F–235° F sugar concentration: 80% At this relatively low temperature, there is still a lot of water left in the syrup. When you drop a little of this syrup into cold water to cool, it forms a liquid thread that will not ball up. Cooking sugar syrup to this stage gives you not candy, but syrup—something you might make to pour over ice cream.
  • Drop small amount of fruit into liquid.
  • Cook on low heat 20-30 minutes until the fruit or rind is transparent.
  • Drain and repeat with rest of fruit in the same syrup.
  • Cool fruit and store in airtight container. Your fruit can also be rolled in granulated sugar after it is cooled, to give it a nice frosty coating and to help keep the bits separate.
  • NOTE: When you are done making your candied fruit, you will have a very tasty syrup that can be used to sweeten drinks, or pour over ice cream... or whatever you can dream up. It might even be good as a glaze on a bundt cake! Be sure you taste it before storing it. If you like it, keep it. If you don't, well then toss it out.
  • Here's how they do it in Canada with lots more tips and information: http://www.canadianliving.com/food/cooking_school/how_to_make_candied_fruit.php More information and tips can be found at: http://allrecipes.com/howto/candying-fruits/
  • Interesting history from Wikipedia: Food preservation methods using sugar (palm syrup and honey) were known to the ancient cultures of China and Mesopotamia. However, the precursors of modern candying were the Arabs, who served candied citrus and roses at the important moments of their banquets. With the Arab domination of parts of southern Europe, candied fruit made its way to the West. The first documents that demonstrate the use of candied fruit in Europe date back to the sixteenth century.
  • Tips & Warnings You can blanch citrus peels (dip them in boiling water for a few minutes) to make them less bitter. If desired, you can also DEHYDRATE your CANDIED FRUIT by spreading thin layers on trays and drying for 12-18 hours at 120 degrees F until fruit is no longer sticky and the center has no moisture. To sun dry, put trays in full sun for 1-2 days, stirring occasionally, until fruit is no longer sticky. Take trays in at night. To oven dry, spread on trays and dry at 120 degrees F for 18-24 hours. Store dried candied fruit in an airtight container.

BEST FRUIT CAKE RECIPE - HOW TO MAKE FRUIT CAKE

Best Fruit Cake Recipe - How to Make Fruit Cake image

This easy fruit cake recipe is dense but moist and not overbearingly boozy, so it's perfect for Christmas. It makes two loaves, too!

Provided by THEPIONEERWOMAN.COM

Total Time 6 hours 30 minutes

Prep Time 25 minutes

Cook Time 0S

Yield 16 servings

Number Of Ingredients 16

2 c.

golden raisins

2 c.

chopped dried apricots

1 c.

chopped dried figs

1 c.

chopped candied ginger

1 c.

brandy, whiskey, or apple cider, plus more for brushing

Nonstick baking spray with flour

3 c.

all-purpose flour

1 tbsp.

apple or pumpkin pie spice

1 tsp.

baking powder

3/4 tsp.

salt

2

sticks unsalted butter, softened

1 1/2 c.

light brown sugar

3

large eggs

1 tbsp.

vanilla extract

1 1/2 c.

candied cherries

1 1/2 c.

chopped nuts, like pecans, walnuts or almonds

Steps:

  • In a medium bowl, stir together the raisins, apricots, figs, ginger, and brandy (sub whiskey or apple cider if you like). Cover and let soak for at least 4 hours or up to 24 hours, stirring a few times during the soak.  Preheat the oven to 300F. Butter or spray 2 (9x5-inch) loaf pans with baking spray. In a medium bowl, whisk together the flour, pie spice, baking powder, and salt. Set aside.  In a large mixing bowl, beat butter with a hand mixer until smooth. Add the sugar and beat on medium speed until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating until well incorporated. Beat in the vanilla. With mixer on low speed, slowly add the flour mixture, beating just until combined. With a spatula, fold in the candied cherries, nuts, and soaked fruit. Divide the batter evenly among the two baking pans.  Bake for 2 hours or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pan for 10 minutes. Run a knife around the cake to release it from the edges. Remove and place them on a cooling rack. Generously brush tops and sides of the cakes with brandy or whiskey (you can also use simple syrup). Cool completely. Store the cakes tightly wrapped in plastic wrap for up to 6 weeks.

BEST SCONE RECIPE | HOW TO MAKE SCONES - JAMIE OLIVER
Scones are wonderfully British, delicious, and so simple even a five-year-old could make them. There’s a magic hour just after they come out of the oven when they are so heavenly I just can't imagine why anyone would prefer store-bought scones. Just remember that the less you touch the dough, the shorter and crumblier your scones will be. Get baking!

    1. First and foremost, brilliant scones are about having the confidence to do as little as possible, so do what I say and they’ll be really great; and the second and third time you make them you'll get the dough into a solid mass even quicker, even better.
    2. Put the dried fruit into a bowl and pour over just enough orange juice to cover. Ideally, leave it for a couple of hours. Preheat the oven to 200°C/400°F/gas 6.
    3. Put your butter, flour, baking powder, sugar and a good pinch of sea salt into a mixing bowl and use your thumbs and forefingers to break up the butter and rub it into the flour so you get little cornflake-sized pieces. Make a well in the middle of the dough, add the eggs and milk, and stir it up with a spatula.
    4. Drain your soaked fruit and add that to the mixture. Add a tiny splash of milk if needed, until you have a soft, dry dough. Move it around as little as possible to get it looking like a scruffy mass – at this point, you’re done. Sprinkle over some flour, cover the bowl with clingfilm and pop it into the fridge for 15 minutes.
    5. Roll the dough out on a lightly floured surface until it’s about 2 to 3cm thick. With a 6cm round cutter or the rim of a glass, cut out circles from the dough and place them upside down on a baking sheet – they will rise better that way (so they say). Re-roll any offcuts to use up the dough.
    6. Brush the top of each scone with the extra milk or some melted butter and bake in the oven for 12 to 15 minutes, or until risen and golden. At that point, take them out of the oven and leave them to cool down a little.
    7. Serve with clotted cream and a little jam or lemon curd.
