1 cup cubed cinnamon-raisin bread
1 large egg
2/3 cup 2% milk
3 tablespoons brown sugar
1 tablespoon butter, melted
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash salt
1/3 cup raisins

Steps:

  • Preheat oven to 350°. Place bread cubes in a greased 2-cup baking dish. In a small bowl, whisk the egg, milk, brown sugar, butter, cinnamon, nutmeg and salt until blended. Stir in raisins. Pour over bread; let stand for 15 minutes or until bread is softened. , Bake until a knife inserted in the center comes out clean, 35-40 minutes. Serve warm.

Chef Ronnie Woo's make-ahead pumpkin bread pudding is a lifesaver for big holiday breakfasts or brunch gatherings.

Number Of Ingredients 16

5 large eggs
2 cups fresh pumpkin puree or one 15-ounce can pumpkin puree
One 14-ounce can sweetened condensed milk
¼ cup packed light or dark brown sugar
2 teaspoons vanilla extract
3 teaspoons pumpkin pie spice (or 2 teaspoons ground cinnamon
¾ teaspoon ground nutmeg
¼ teaspoon ground ginger and ¼ teaspoon ground cloves)
¼ teaspoon kosher salt
2 cups half-and-half or whole milk
1 cup plain or frosted cornflakes cereal
4 tablespoons (½ stick) unsalted butter
melted
9 cups cubed brioche or white bread (¾-inch cubes)
Vanilla ice cream
for serving

Steps:

  • Preheat the oven to 350°F, with a rack at the center
  • Make the custard
  • In a large bowl, whisk together the eggs, pumpkin puree, sweetened condensed milk, brown sugar, vanilla extract, pumpkin pie spice and salt until the sugar dissolves
  • Whisk in the half-and-half until fully combined
  • In a small bowl, toss together the cornflakes and melted butter until coated
  • Set aside
  • Add the brioche to the custard and gently toss to combine
  • Fill a 10-inch high-sided pie dish (or a 9 x 9-inch baking dish) with the mixture, keeping in mind there may be some leftover mixture
  • Cover the top with the buttered cornflakes
  • Bake on the center rack until set and golden brown on top, about 50 to 60 minutes
  • Let cool for a few minutes before serving with vanilla ice cream
  • Storage Instructions: Cool completely, cover tightly with plastic wrap and refrigerate for up to 3 days
  • Freezing, Thawing and Reheating Instructions: Cool completely, cover tightly in plastic wrap and freeze for up to 2 months
  • For best results, defrost in the fridge overnight before eating (it’s delicious cold!) or reheating
  • To reheat, preheat oven to 350°F and bake until warmed through and the top is crispy, about 15 to 20 minutes
