CRAB-STUFFED TILAPIA RECIPE: HOW TO MAKE IT

- In a large skillet, saute onion and celery in 1/4 cup butter until tender. Remove from the heat; stir in the crab, bread crumbs, mayonnaise, egg, pimientos and seafood seasoning. Spread 1/3 cup crab mixture over fillets. Roll up each from the pointed end; secure with toothpicks., Place seam side down in a greased 9-in. square baking pan. Melt remaining butter; drizzle over fish. Sprinkle with salt and paprika., Bake, uncovered, at 400° until fish just begins to flake easily with a fork, 25-30 minutes. Discard toothpicks. Spoon pan juices over fish.

- Use a pestle and mortar to grind up your chipotle pepper. You want to get it somewhere between a powder and small flakes. If you’ve bought crushed chipotle peppers you can skip this step.
- Add your dried ingredients to a bowl. It doesn’t matter what order you do this in.
- Mix the ingredients thoroughly with a spoon.
- Store in an airtight jar or sealable bag. The seasoning will keep for up to 4 months.

- Make poppers: In a large bowl, combine cream cheese, mayonnaise, egg, lemon juice, Old Bay, and Worcestershire. Mix until smooth, then fold in crab meat, mozzarella, garlic, 1 tbsp. chives, and ¾ cup bread crumbs. Season with salt and pepper. Roll mixture into small balls (about 1"), then coat in remaining panko. Freeze until firm, about 30 minutes. Meanwhile, make aioli: In a small bowl, whisk together mayonnaise, lemon juice, Old Bay, and remaining chives until smooth. Season with pepper. In a large, deep skillet over medium heat, heat about ½" vegetable oil. Working in batches, add crab cake poppers. Fry until all sides are golden, using tongs to gently turn balls, about 3 minutes per side. Drain on a paper towel–lined plate. Garnish poppers with Parmesan and parsley, and serve warm with aioli.
