Biscuits and Sausage Gravy Recipe: How to Make It image

This biscuits and sausage gravy is an old southern recipe that I've adapted. Homemade sausage gravy is a classic, hearty breakfast that takes you on a trip to the South every time it's served. —Sue Baker, Jonesboro, Arkansas

1/4 pound bulk pork sausage
2 tablespoons butter
2 to 3 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1-1/4 to 1-1/3 cups whole milk
Warm biscuits

Steps:

  • In a small skillet, cook sausage over medium heat until no longer pink, 3-5 minutes, breaking into crumbles; drain. Add butter and heat until melted. Add the flour, salt and pepper; cook and stir until blended. Gradually add the milk, stirring constantly. Bring to a boil; cook and stir until thickened, about 2 minutes. Serve with biscuits.

1/2 cup vegetable oil
3/4 cup flour
1 teaspoon seasoning salt or 1 teaspoon salt
black pepper (lots black pepper!)
4 cups half-and-half cream or 4 cups 18% table cream

Steps:

  • Heat oil in a large skillet over medium heat; whisk in the flour, salt and pepper until smooth.
  • Cook and stir over medium heat until browned (about 10 minutes, the mixture MUST be browned!).
  • Gradually whisk in milk or cream; cook/whisk until smooth and thickened (no lumps must remain).
  • If the gravy becomes too thick add in a litle more milk and whisk until smooth and heated.

Bring to a simmer and cook, whisking occasionally, until the gravy is thickened, 10 to 15 minutes. Stir in the Worcestershire sauce, salt and a few grinds of pepper. Pour your turkey drippings into a fat separator (or use a liquid measuring cup and spoon off the fat). Add the dark drippings to the gravy. Pour into a gravy boat.
