    1. Put the salmon flesh side down in a large cold non-stick frying pan and place on a medium-high heat.
    2. As the pan comes up to temperature and the salmon begins to sizzle (about 3 minutes), flip it over and cook on the skin side for 5 minutes, or until very crisp and just cooked (depending on its thickness).
    3. Meanwhile, halve the cherry tomatoes, tear up most of the basil leaves, then toss it all with 1 tablespoon of red wine vinegar and a pinch of sea salt and black pepper.
    4. Squash the olives and discard the stones, then finely chop the flesh. Mix with 1 teaspoon of extra virgin olive oil and a splash of water.
    5. Finely slice the chorizo, add to the pan for the last 2 minutes, then toss in the dressed tomatoes for 30 seconds.

  • Preheat the oven to 220°C/425°F/gas 7. Cut each pepper into four rings, removing the seeds, and place directly on the bars of the oven to soften for 15 minutes. Meanwhile, finely chop the parsley, stalks and all, putting the chopped leaves aside. Finely chop the chorizo and place in a 30cm non-stick ovenproof pan on a medium-high heat with ½ a tablespoon of olive oil. Stir for 1 minute, until crisp, then peel and finely grate in the garlic, add the chopped parsley stalks, stir for another minute, then remove to a bowl, leaving the pan on the heat. Stir in 1 mug of rice and 2 mugs of boiling kettle water (600ml), season with sea salt and black pepper, nestle in the softened pepper rings, cover, and put into the oven for 15 minutes. Add the prawns to the chorizo mixture, finely grate in all the lemon zest, squeeze in the juice of 1 lemon, then mix together. When the time’s up on the rice, remove the pan, uncover, and sprinkle over the chorizo mixture, gently poking the prawns into the rice. Return to the oven for a final 5 minutes, or until the prawns are cooked through. Drizzle over 1 tablespoon of extra virgin olive oil, and sprinkle over the reserved chopped parsley leaves. Serve with the yoghurt and the remaining zested lemon cut into wedges, for squeezing over.

CHICKEN AND CHORIZO PAELLA RECIPE | JAMIE OLIVER RECIPES
I’ve made a few paellas in my time. The biggest one was for about 800 people in a village in Spain and it was hard work, but an incredible experience. The Spanish can be quite protective about what is and what isn’t a paella, but at the same time, the spirit of their cooking has always been flexible to whatever meat, fish, seafood or game can be found. I’ve eaten and enjoyed many paellas, and I hope you like my humble, great-value expression of one.

    1. Peel and finely slice the garlic, peel and roughly chop the onion and carrot. Finely chop the parsley stalks, then roughly chop the chorizo and chicken thighs.
    2. Put a lug of oil into a large lidded shallow casserole or paella pan on a medium heat, add the garlic, onion, carrot, parsley stalks, chorizo, chicken and paprika, and fry for around 5 minutes, stirring regularly.
    3. Deseed and chop the pepper, then add to the pan for a further 5 minutes.
    4. Stir through the tomato purée and crumble in the stock cube, then add the rice and stir for a couple of minutes so it starts to suck up all that lovely flavour.
    5. Pour in 750ml of boiling water and add a pinch of sea salt and black pepper. Pop the lid on and bring to the boil, then reduce to a simmer for 15 minutes, stirring regularly from the outside in and from the inside out, and adding a splash of water if needed.
    6. Stir in the peas and prawns, replace the lid, and cook for a further 5 minutes, or until hot through.
    7. Season to perfection, then chop the parsley leaves, scatter them over the paella, and serve with lemon wedges on the side for squeezing over.

SWEET POTATO AND CHORIZO SAUSAGE BITES RECIPE | SOUTHERN ...
Note from the recipe developer: In my hometown, you'll find a local twist on sausage balls, the ubiquitous Southern nibble. Sweet potato farmers' wives often mix a bit of roasted sweet potato into the dough. I've switched out breakfast sausage for peppery Mexican-style chorizo. Sweet potatoes can be prepared in countless ways, from decadent casseroles to silky pies. This sausage ball appetizer uses sweet potatoes in a way that's as flavorful as it is unique. The creator of this delicious sausage ball recipe, April McGreger knows sweet potatoes. She is, after all, a daughter of, and sister to, a family of sweet potato farmers in Vardaman, Mississippi. And Vardaman, Mississippi is, after all, the Sweet Potato Capital of the World. Although sweet potato sausage balls may not be the first sweet potato recipe that jumps to mind when you're considering cooking the staple fall vegetable, these sweet potato sausage balls just might be one of the best Thanksgiving appetizers ever. According to McGreger, this recipe is classic in her Mississippi hometown—sweet potato farmers' wives often whip up the sausage ball appetizer using dough blended with hearty roasted sweet potatoes. This sausage ball recipe gets a kick from spicy, peppery Mexican-style chorizo sausage. These chorizo sausage appetizers may be small in size, but they will make a big difference on your menu. Extra-sharp cheddar cheese, a dash of cinnamon, and a few scoops of plum jelly give this chorizo sausage ball recipe multiple layers of savory flavor.
