This fudge is easy to make and very delicious. Enjoy this with your loved ones. For best results be sure to use a candy thermometer.

Yield 60 squares

2 cups white sugar
½ cup cocoa
1 cup milk
4 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Grease an 8x8 inch square baking pan. Set aside.
  • Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
  • Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
  • Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
  • Pour into prepared pan and let cool. Cut into about 60 squares.

2 cups pecan halves
2 (12 ounce) bags chocolate chips
25 individually wrapped caramels, unwrapped
2 tablespoons water
½ cup butter, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange pecans on a baking sheet.
  • Bake pecans in the preheated oven until fragrant and lightly browned, 7 minutes.
  • Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  • Line a baking sheet with aluminum foil; grease with butter.
  • Combine caramels, water, and butter in a saucepan over low heat; cook, stirring occasionally, until caramels are melted and smooth. Fold in pecans.
  • Drop caramel mixture by the spoonful onto the prepared baking sheet. Allow to cool and harden.
  • Drizzle chocolate over caramel nut clusters. Refrigerate to set, about 1 hour.

You’ll want the white chocolate wet when you put the crushed candy canes on it so they’ll stick better. Let the white chocolate firm up completely (you can put the pan back in the fridge if you like) and then break it up into big pieces. The bark is ready to eat immediately or you can package it up to give away. Store it in a covered container and keep it away from heat.
