This dish is really sweet, but oh so good. I loved it paired with some biscuits. But, this would be wonderful served alongside some pork too.

8 cup(s) pealed and sliced up green baldwin pears. check your region for local.
2 cup(s) water
1 stick(s) butter
2 cup(s) sugar
1/4 teaspoon(s) nutmeg
1/2 teaspoon(s) cinnamon, ground
1 large lemon juice, fresh

Steps:

  • Peel and cut up a bunch of fresh pears. Measure them out to get 8 cups. Put them in a bowl and juice 1 fresh lemon on top of them. Stir til all are covered. Set aside.
  • Melt butter in medium size stick proof material pan.
  • Add sugar and water. Cook on med. high until all is blended and sugar is melted.
  • Then add pears and spices. Cook down on med for about 1 hour stirring constantly until tender. If they are harder cook longer. If they are softer cook less. You just need to get them to the consistancy that you like.
  • Put in Mason jars until 1" from the top. Cook in water bath to seal jars. Water bath is a super wide bottom pan that you fill about 2" tall in water. Then you put the mason jars down into already warm bath water and cook for approximately 10-15 min til it seals all jars.

1 full Pear
1/2 cup Sugar
1 cup water
2-3 drops food colour of your choice

Steps:

  • Thinly slice the pearsvertically. Start from middle and then keep slicing till one end.
  • Make a simple sugar syrup by boiling water and sugar till sugar dissolves.
  • Dip the slices in the sugar syrup and let them simmer in the syrup on medium heat
  • You'll begin to see the colour setting onto the pear slices after 5-10 minutes
  • On a baking tray, lined with parchment paper, place the pear slices.
  • Bake the slices in the oven at lowest temperature for about 3-4 hours. Or till the sides of the pear are shrunken and the slices look dried out.

    1. Add the fruit rinds to a large saucepan and cover with water. Make sure they are totally submerged – a plate can help to weigh them down.

  • Preheat the oven to 300°F. Line a baking sheet with parchment paper or a silicone baking mat.  In a small bowl, whisk together the sugars, cinnamon and salt.  In a large bowl, whisk the egg white and vanilla extract until very foamy, about 1 minute.
