3/4 cup buttermilk
2-1/4 teaspoons kosher salt
1-1/2 teaspoons rubbed sage
1-1/2 teaspoons brown sugar
1-1/2 teaspoons pepper
3/4 teaspoon dried marjoram
3/4 teaspoon dried savory
3/4 teaspoon cayenne pepper
1/4 teaspoon ground nutmeg
2-1/2 pounds ground pork

Steps:

  • In a large bowl, combine the first 9 ingredients. Add pork; mix lightly but thoroughly. Shape into twenty 3-in. patties., In a large skillet coated with cooking spray, cook patties in batches over medium heat until a thermometer reads 160°, 5-6 minutes on each side. Remove to paper towels to drain.
    Freeze option: Wrap each cooked, cooled patty; transfer to an airtight container. Freeze for up to 3 months. To use, unwrap patties and place on a baking sheet coated with cooking spray. Bake at 350° until heated through, about 15 minutes on each side.

It's quick and easy, the mixture can be made in advance, and the cooked patties can be thrown in the freezer and then microwaved for a quick minute. This recipe easily doubles.

1 pound ground pork
½ tablespoon salt
⅔ teaspoon ground marjoram
½ teaspoon rubbed sage
½ teaspoon rubbed savory
½ teaspoon freshly ground black pepper

Steps:

  • Combine ground pork, salt, marjoram, sage, savory, and pepper in a large bowl. Use your hands to mix ingredients together. Shape mixture into eight 2-ounce patties, about the size of a small burger bun.
  • Fry sausages in a nonstick skillet over medium-high heat until cooked through, about 3 minutes per side.

  • Grease a 9-by-13-inch (or other 3-quart) baking dish with butter or nonstick spray. Preheat the oven to 350 degrees. Heat a large skillet over medium-high heat. Add the sausage and break up into small pieces with a wooden spoon. Cook the meat until no pink pieces remain, 6-8 minutes. Add the red bell pepper and white and light green parts of the scallions and cook 3 more minutes. Transfer to a plate to let cool slightly. Meanwhile, in a large bowl whisk together the eggs, heavy cream, mustard, hot sauce, salt, black pepper and about one-half of the remaining green parts of the scallions (save the rest to sprinkle on top of the casserole once baked.) Gently fold 1 ½ cups of cheese, the hash-browns and the sausage mixture into the egg mixture. Transfer all to the baking dish and smooth into an even layer. Cover with aluminum foil and bake for 50 min. Remove the foil and top with the remaining ½ cup of cheese. Increase the oven temperature to 400 degrees and finish baking until the center of the casserole is set (not jiggly) and the top is slightly golden, 10-15 more minutes.
