2 tbsp.

milk

1/4 tsp.

garlic powder

Kosher salt

Freshly ground black pepper

1 tbsp.

butter

1 tbsp.

finely chopped chives

shredded cheddar

Steps:

  • In a large bowl, whisk together eggs, milk, and garlic powder and season with salt and pepper. In a nonstick skillet over medium heat, melt butter. Add eggs and scramble, 3 minutes, then stir in chives. On a cutting board, lay out three strips of bacon. Sprinkle the bottom third with cheddar and top with a large spoonful of scrambled eggs. Roll up tightly. Repeat with remaining cheese and eggs. Return skillet to heat and add bacon roll-ups seam side down. Cook until crispy on all sides, then transfer to a paper towel-lined plate until ready to serve.

6 large eggs
2 tablespoon(s) milk
- salt and pepper
1 tablespoon(s) butter
1 tablespoon(s) fresh chopped chives
18 slice(s) bacon
1 cup(s) sharp cheddar cheese

Steps:

  • Whisk the eggs with the milk, salt and pepper. melt the butter in a large skillet. Scramble the eggs whisking constantly until they just start to set up remove from heat and keep whisking keeping the eggs slightly firm but still a little wet. Stir in the chives. Set aside
  • Preheat oven 350 degrees. Line a baking sheet with foil. Lay three pieces of bacon on board overlapping each piece a bit. Top with 1/3 cup of cheese down the center then spoon some egg mixture on top of cheese.
  • Roll the bacon up tightly enclosing the egg cheese mixture. Lay on the baking pan. Repeat with remaining ingredients.
  • Bake for 20 minutes until the bacon starts to crisp. Remove from oven and place the rolls in a large skillet over high heat and brown until desired crispness on each side. Serve

Whisk occasionally as flour mixture starts to brown. Gradually whisk in milk and continue to whisk until it is thick and starts to bubble, adding more milk if it is too thick. Lower heat and keep warm until serving. Serve Egg Rolls with Gravy for dipping. Can be stored in a zip- top bag in the refrigerator and reheated in the toaster oven when ready to serve.
