When my girls were young, they could not eat a taco without breaking the shell and having a mess! I started making them pita bread sandwiches and they loved them. Adults like them also. Very easy and a quick meal on weekdays when time is short.

Number Of Ingredients 10

1 lb ground round
1 medium onion, diced
1 package taco seasoning, mild
1 package pita bread
1 cup water
buttermilk ranch dressing
shredded mexican cheese
lettuce, shredded
cucumber, chopped
avocado, slices

Steps:

  • brown meat in 10 inch skillet until cooked.
  • add onion and cook for 10 minutes.
  • add taco seasoning with water and cook additional 10 minutes.
  • drain mixture
  • cut pita bread in half and "open" pocket.
  • place ground meat mixture inside
  • put whatever you want inside your taco and serve ranch dressing over the top.

Stuffed with spinach, olives, cucumbers, tomatoes, feta and with a garlicky lemon vinaigrette, these Greek Pita Sandwiches are easy to pull together. Add a schmear of your favorite hummus (optional) for a hearty pita bread sandwich! This recipe is vegetarian and easily vegan.

2 Tbs Extra Virgin Olive Oil
2 Tbs Fresh Lemon Juice (about 1 1/2 lemons)
1/2 tsp Minced Garlic (about 1 small clove)
1/4 tsp Dried Oregano
Pinch Fine Sea Salt
2, 7" - 8" Pitas (cut in half)
2 1/2 C (55g) Spinach (packed then chopped into small ribbons. )
3/4 C (115g) Cucumber (sliced in 1/4" rounds, then quartered, about 1/2 a medium cucumber)
1/3 C (60g) Kalamata Olives (pitted and quartered)
1 Tbs Purple Onion (chopped fine)
1/2 pint (170g) Cherry Tomatoes (quartered or 2 Roma tomatoes sliced thin and in half, add more to taste)
1/3 C (50g) Feta (leave off or sub dairy free if needed)
4-6 Leaves of Fresh Basil (torn into small pieces )
5-6 Grinds of Black Pepper
3/4 C (375g) Prepared Hummus ((optional)* see note)
