Mushroom-Gouda Quiche Recipe: How to Make It image

For a laid-back Sunday brunch, we make a quiche in no time using refrigerated pie crust. Load it up with mushrooms, aromatic arugula and creamy Gouda. —Thomas Faglon, Somerset, New Jersey

Number Of Ingredients 8

1 sheet refrigerated pie crust
4 large eggs
1 cup heavy whipping cream
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups sliced fresh shiitake mushrooms (about 4 ounces)
1 cup shredded Gouda or Monterey Jack cheese
1 cup chopped arugula or fresh baby spinach

Steps:

  • Preheat oven to 350°. Unroll crust into a 9-in. pie plate; flute edge. Refrigerate while preparing filling., In a large bowl, whisk eggs, cream, salt and pepper until blended. Stir in remaining ingredients. Pour into crust., Bake on a lower oven rack 30-35 minutes or until crust is golden brown and a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.
    Freeze option: Cover and freeze unbaked quiche. To use, remove from freezer 30 minutes before baking (do not thaw). Preheat oven to 350°. Place quiche on a baking sheet; cover quiche crust loosely with foil. Bake as directed, increasing time as necessary for a knife inserted in the center to come out clean.

375 g pre-rolled shortcrust pastry
3 large free-range eggs
150 ml single cream
50 g Cheddar cheese
100 g cooked higher-welfare ham
50 g stilton
a few sprigs of fresh sage

Steps:

    1. Preheat the oven to 180ºC/gas 4.
    2. Line a 20cm tart tin with the pastry, prick with a fork and place in the freezer for an hour.
    3. Line the tart case with greaseproof paper and fill with baking beans or rice. Blind bake in the oven for 15 minutes. Remove the paper and beans and bake for a further 5 minutes.
    4. In a large bowl, beat the eggs with the cream. Coarsely grate and sprinkle in the Cheddar and shred in the ham. Crumble in the stilton, snip in the sage leaves and season with some black pepper. Mix all together with a fork, and carefully pour into the pastry case.
    5. Place back in the oven and bake for a further 25 minutes until golden.
