Optional toppings: American cheese, shredded iceburg lettuce, sliced tomato, sliced red onion, dill pickle slices, ketchup, mustard, and mayonnaise

Steps:

  • Combine the ground beef, ground sirloin, Worcestershire sauce, salt, and pepper in a large bowl. Gently mix the beef mixture to thoroughly combine with the seasoning. Divide the mixture into 4 even portions, about 8 ounces each. Pat each portion into a ball (but not too tightly), then press into one-inch thick patties. On the stovetop: Heat a large cast-iron skillet over medium-high heat. Add 1 tablespoon of vegetable oil and swirl to coat the pan. Place the patties in the skillet and let cook for 3 to 4 minutes until golden and crusty. Flip and cook the other side until the internal temperature of the burger reaches 135° (for medium doneness), about 3 more minutes. If you like cheese on your burgers, add it during the last minute of cooking, then cover to melt. Alternatively cook on the grill: Preheat your grill over medium-high heat, 400 to 425°. Oil the grill grates. Place the patties on the grill over direct heat. Cook for 3 to 4 minutes per side, covered, or until the internal temperature reads 135° (for medium doneness). If you like cheese on your burgers, add it during the last minute of cooking, then cover to melt. Serve immediately on toasted buns with whatever toppings you like!

1kg minced beef
300g breadcrumbs
140g extra-mature or mature cheddar , grated
4 tbsp Worcestershire sauce
1 small bunch parsley , finely chopped
2 eggs , beaten
split burger buns
sliced tomatoes
red onion slices
lettuce , tomato sauce, coleslaw, wedges or fries

Steps:

  • Crumble the mince in a large bowl, then tip in the breadcrumbs, cheese, Worcestershire sauce, parsley and eggs with 1 tsp ground pepper and 1-2 tsp salt. Mix with your hands to combine everything thoroughly.
  • Shape the mix into 12 burgers. Chill until ready to cook for up to 24 hrs. Or freeze for up to 3 months. Just stack between squares of baking parchment to stop the burgers sticking together, then wrap well. Defrost overnight in the fridge before cooking.
  • To cook the burgers, heat grill to high. Grill burgers for 6-8 mins on each side until cooked through. Meanwhile, warm as many buns as you need in a foil-covered tray below the grilling burgers. Let everyone assemble their own, served with their favourite accompaniments.

  • Divide the minced beef into four equal portions and roll them into balls without pressing them together too much. Squash the balls and gently mould them into four "quarterpound" patties the same size as your burger buns. Chill the patties in the fridge for at least 10 minutes.
