Just one ingredient will make your burgers infinitely juicier this summer, and it's already in your kitchen: butter!

2 sticks (8 ounces) cold unsalted butter
3 pounds ground beef, preferably sirloin
1 tablespoon kosher salt
8 slices cheese, such as American, cheddar, or Swiss (optional)
For serving: split hamburger buns, lettuce, sliced tomato, thinly sliced red onion

Steps:

  • Grate the butter. Using the large holes of a box grater, grate the cold butter into large, thin pieces. (Use the wrapper from the butter to catch the butter shards and make moving them easier.)
  • Form the patties. Place the ground beef in a large bowl and sprinkle the butter on top. Using your hands, quickly and gently fold the butter into the beef. Shape the burgers into 8 (6-ounce) patties about 4 inches in diameter and 3/4-inch thick.
  • Season the patties. Place the patties on a rimmed baking sheet and season both sides with salt. Be generous, but you might not use all the salt called for. Set aside while you prepare the grill.
  • Prepare the grill for medium-high heat. Heat an outdoor grill to direct, medium-high heat. Scrape the grill grates clean if needed.
  • Grill for 4 minutes each side. Place the patties on the grill in a single layer. Grill the burgers for 4 minutes — expect a few flare-ups as the butter melts. Using a thin metal spatula, flip the burgers and grill until the burgers are browned and crisp on the outside, about 4 minutes more.
  • Serve the burgers. If using cheese, place a slice on each patty during the last minute of grilling. Serve immediately.

1 pound (4 sticks) unsalted butter, softened
1 1/2 teaspoons minced fresh basil 
1 1/2 teaspoons minced fresh parsley 
1 1/2 teaspoons minced fresh tarragon 
Pinch cayenne pepper 
2 large cloves garlic, minced 
Salt and freshly ground black pepper
1 cup mayonnaise
1 tablespoon fresh lime juice 
1 teaspoon paprika 
1/4 teaspoon cayenne 
1/4 teaspoon ground cumin 
11 small cloves garlic, roasted and chopped 
2 pounds fresh ground beef or four 8-ounce Angus beef patties
4 slices cheese
4 large burger buns

Steps:

  • For the compound butter: Stir together the butter, basil, parsley, tarragon, cayenne and garlic; season with salt and pepper. Spoon the mixture onto a piece of plastic wrap in a 6-inch-long mound. Fold the plastic wrap over the mixture to enclose it, and roll it to form a log about 2 1/2 inches in diameter. Chill until firm, about 2 hours.
  • For the roasted garlic aioli: Blend the mayonnaise, lime juice, paprika, cayenne, cumin and garlic in a food processor until smooth.
  • For the burgers: Preheat the oven to broil.
  • Form the ground beef into 4 patties. Stuff a slice of the compound butter inside each and broil the burgers to the desired doneness. Add another slice of the butter to the top of each burger, followed by a slice of cheese. Broil briefly, just until the cheese melts.
  • Serve on buns with a small mound of the aioli on top of the cheese.

Heat a large cast-iron skillet over medium heat. Add 2 tablespoons of butter and swirl to coat the pan. Place the onion slices in the pan and cook for 3 minutes on each side, until golden brown. Remove from the skillet and set aside. Add the remaining 1 tablespoon of butter to the skillet. Place the bison patties in the skillet and sear until golden, about 5 minutes. Flip and cook the other side until the internal temperature of the burger reaches 130 to 135° (for medium-rare), 3 to 4 minutes more. If you like cheese on your burgers, add it during the last minute of cooking, then cover to melt.  Serve the burgers immediately on toasted buns with seared red onion rings, pickles, and BBQ sauce.
