Prep Time 30 minutes

Cook Time 0S

Yield 12-16 servings

Number Of Ingredients 18

3/4 c.

salted butter, plus more for greasing pan

5 oz.

dark chocolate bars, chopped

3 tbsp.

unsweetened cocoa powder

1 tsp.

instant coffee

1 1/4 c.

granulated sugar

2 tsp.

vanilla extract

1

large egg + 1 large egg yolk

1 c.

plus 2 tablespoons all-purpose flour

1/4 tsp.

baking powder

1/2 c.

salted butter, softened

1/2 c.

firmly packed light brown sugar

1/4 c.

granulated sugar

1

large egg

1 1/2 tsp.

vanilla extract

1 1/4 c.

all-purpose flour

1/4 tsp.

baking soda

1/4 tsp.

salt

1 c.

chocolate chips, or chopped dark chocolate

Steps:

  • Preheat the oven to 350F. Grease a 9x13-inch baking pan and line with parchment paper, leaving two sides longer, that hang about 2-inches over the long sides of the pan.  For the brownie batter: In a medium saucepan, melt the butter on medium-low heat. Add the chopped chocolate, whisking occasionally until smooth and melted. Sprinkle in cocoa powder and instant coffee, and whisk to combine. Remove the pan from heat and let it cool for 5 minutes. Stir in sugar, vanilla, egg and egg yolk just until just combined. Add the flour and baking powder, and fold in with a rubber spatula just until incorporated. Set aside. For the cookie dough: In a large mixing bowl, combine the butter and sugars. Beat on medium speed until light and fluffy, about 3 minutes. Add the egg and vanilla and beat until combined. In a small mixing bowl, whisk together the flour, baking soda, and salt. Add to the butter mixture and beat just until incorporated. Reserve 1/4 cup of the chocolate chips, and mix the remainder into the cookie dough.  Drop the cookie dough and brownie batter by heaping spoonfuls around the prepared pan, alternating the two types of dough. Gently tap the pan on the counter to settle the batter and close up any gaps. Sprinkle with the remaining 1/4 cup of chocolate chips. Bake for 20 minutes, then tent with foil and bake for another 10-15 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Let the brookies cool completely in the pan, about 1 hour. Remove the brookies by pulling on the ends of the parchment paper and transfer them to a cutting board for easy slicing.

  • Place the softened butter and sugar in a large bowl (or the bowl of a stand mixer). With a hand mixer (or stand mixer with a paddle attachment) on medium speed, beat until light and fluffy, 2-3 minutes. Add the egg, vanilla and peppermint extract and mix well to combine. Add the flour 1 cup at a time, mixing on low to combine completely in between each addition. Scrape the bottom and sides of the bowl as needed. Remove half of the dough from the bowl and form into a disc shape, about 1-inch thick. Wrap tightly with plastic wrap and refrigerate for 1 hour (or overnight). Place the red food coloring in the bowl with the remaining dough. Mix on low to incorporate the coloring into the dough fully (add more food coloring until you reach your desired shade of red). Remove the red dough from the bowl, knead it a few times on a clean surface to incorporate all of the coloring completely, and form into a disc shape, about 1-inch thick. Wrap tightly with plastic wrap and refrigerate for 1 hour.  Line 2 large baking sheets with parchment paper. Preheat the oven to 375°F. Unwrap both pieces of dough and pinch off 1/2-tablespoonful pieces of each color. With the palm of your hand, roll each dough ball on a clean surface into a 5-inch long rope. (It’s best to roll all of the white dough in one spot on your counter, and all of the red dough in another spot, so that the white pieces don’t pick up any red dough left on the surface.) Place the ropes side by side and twist, pinching the tops and bottoms to stick together. Carefully transfer to the sheet trays and form into a candy cane shape. Continue to roll, twist and form all of the cookies. (If the dough starts to get too sticky, or difficult to roll without breaking, re-wrap it in plastic wrap and pop it back in the fridge for 15 minutes to firm up again). Bakes the cookies 12 minutes, or just until the white dough looks lightly golden. If decorating with crushed candy canes, sprinkle as soon as they come out of the oven. Let cool completely on the baking sheets. Store in an air-tight container in a single layer, between sheets of parchment paper, for up to 1 week at room temperature.

BROOKIES RECIPE - NYT COOKING
Why just eat a chocolate chip cookie when you could marry it with a dense, fudgy brownie? You do have to make two different batters, but each is whipped up in the same pot without any fancy equipment. You can swirl the two batters together to see both elements at first glance, or simply pour one on top of the other and create a surprise second layer. Either way, make sure to shower the top with extra chocolate.
