Sweet Pepper Sandwiches Recipe: How to Make It image

1 each small green, sweet red and yellow pepper, thinly sliced
1 small onion, thinly sliced
1 tablespoon olive oil
1 garlic clove, minced
1 tablespoon balsamic vinegar
2 ounces fresh mozzarella cheese
1/4 cup fat-free mayonnaise
1/2 teaspoon prepared horseradish
4 hard rolls, split and toasted
8 fresh basil leaves
1 plum tomato, thinly sliced

Steps:

  • In a large nonstick skillet, saute peppers and onion in oil until crisp-tender. Add garlic; cook 1 minute longer. Drizzle with vinegar; toss to coat. , Cut mozzarella cheese into four slices. Combine the mayonnaise and horseradish; spread over cut sides of rolls. Spoon vegetable mixture onto bottom halves; top with cheese., Broil 4-6 in. from the heat for 2-4 minutes or until cheese is melted. Top with basil leaves and tomato. Replace roll tops.

Number Of Ingredients 7

1 1/2 lbs sweet Italian sausage, cut into 1/2 inch slices (or use both sweet and hot sausages)
1/2 cup water
2 large green bell peppers, seeded and cut into 1-inch pieces (or use 1 red and 1 green)
2 onions, cut into 1-inch pieces
2 teaspoons dried oregano
6 crusty French rolls, halved horizonally
1/2 lb sliced provolone cheese

Steps:

  • Cook sausage in a large skillet over medium heat until brown (10 minutes). Reduce heat to low and add water, cover and simmer for 10 minutes.
  • Add peppers, onions and oregano to skillet and saute until tender (10 minutes). Pour off liquid.
  • Spoon sausage mixture into rolls, topping off with a few slices of cheese.
  • If desired, can be heated under broiler so cheese melts.
