(1 stick) unsalted butter, at room temperature

firmly packed dark brown sugar

Steps:

  • In a large bowl, whisk together dry ingredients (except for sugar). Using an electric mixer, beat butter and sugar until light and fluffy, about 3 minutes. Beat in egg and then vanilla (and molasses, if making gingerbread dough). Reduce the mixer speed to low and gradually add flour mixture, mixing just until incorporated. Shape dough into 4 disks and roll each between 2 sheets of wax or parchment paper to 1/8 inch thick. Using floured triangle cookie cutters, cut out cookies. Use a paring knife to cut out mustache and beard shapes. Do not remove from larger piece of dough. Chill until firm, 30 minutes in the refrigerator or 15 minutes in the freezer. Heat oven to 350°F. Line baking sheets with parchment paper.  Pop out cookies and place on prepared sheets, placing triangles together and mustaches and beards together. Bake, rotating the positions of the pans halfway through, until cookies are light golden brown around the edges and feel sandy on top, 8 to 12 minutes. Let cool on the sheets for 5 minutes before transferring to wire racks to cool completely. Reroll, cut, and chill the scraps. Prepare royal icing and tint some red, green and gold, leaving some white. Decorate as desired, sprinkling with sanding sugar while wet. Use icing to "glue" on mustaches and beards.
