Despite its name, the boiled egg shouldn't be boiled throughout the cooking process—a method that yields a rubbery result—but rather brought to a boil and then immediately removed from heat. Serve with buttered toast.

4 large eggs
Coarse salt and freshly ground pepper

Steps:

  • Place eggs in a saucepan large enough to accommodate them in a single layer. Fill the pan with cold water, covering eggs by an inch. Set over medium-high heat, and bring to a boil. Turn off heat, cover, and let stand 1 1/2 to 2 minutes. Remove eggs from water. Serve immediately in egg cups -- perfect for cracking and scooping the egg right from the shell. Season with salt and pepper.

One egg
2~4 shrimp
a little salt
a little Soy sauce
a little pepper
3 half eggshells warm water

Steps:

  • First take out the shrimp and season with a little salt and pepper.
  • Stir the egg liquid with a fork.
  • Pour in water, as shown in the picture above, pour 3 and a half eggshells of warm water into the egg liquid.
  • Spoon out the bubbles with a spoon, and the egg liquid is bubble-free.
  • Seal the bowl tightly with plastic wrap and poke a small hole in the plastic wrap with a toothpick.
  • Put the egg mixture into the microwave oven for 1m20s to start.
  • Put the freshly seasoned shrimp on top of the solidified egg liquid. Put it in the microwave oven again with low heat for 1 min, you can observe the condition of the egg during the process, and it can be eaten after solidification.

  • Fill a large bowl with ice and water. Heat about 3 inches of water in a small saucepan over medium heat until boiling. Once the water is boiling, reduce the heat until it's barely at a simmer, add the eggs gently and cook for 6 minutes. Set a timer! Remove the eggs with a slotted spoon and place them in the ice bath. Let the eggs cool slightly before peeling. Instead of peeling, you can slice the top off and just use the egg yolk for dipping toast sticks---or you can peel the whole egg and serve it similarly to a poached egg.
