My family loves French fries and with 4 children the bag fries from the store just weren't enough and became too expensive. So I tried batter - after all it makes chicken, shrimp, and onion rings crispy so why not potatoes. Now even my husband can't get enough of these French fries. They even stay crispy when you reheat in the microwave.

2?½ pounds russet potatoes, peeled
1 cup all-purpose flour
1 teaspoon garlic salt
1 teaspoon onion salt
1 teaspoon salt
1 teaspoon paprika
½ cup water, or as needed
1 cup vegetable oil for frying

Steps:

  • Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
  • Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
  • Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.

Get crispy, crunchy fries with much less oil than deep frying requires with these air-fried spuds. For the best texture, keep each fry as evenly sized as possible. Try a mandoline to make quick work of equal fries if your knife work could use some help.

2 (6 ounce) russet baking potatoes
2 tablespoons olive oil
1 tablespoon cornstarch
½ teaspoon coarsely cracked black pepper
? teaspoon salt
¼ teaspoon paprika
Cooking spray

Steps:

  • Scrub potatoes well. Cut the unpeeled potatoes lengthwise into 3/8-inch sticks. Place in a large bowl; cover with water and let stand for 30 minutes. Drain well and pat very dry. Return to the dried bowl; add oil and toss to coat. Sprinkle with cornstarch, pepper, salt and paprika; toss to coat.
  • Coat the basket of an air fryer with cooking spray. Place the potatoes in the basket and coat the potatoes well with cooking spray. Fry at 360 degrees F, stirring every 5 minutes, until very crispy, 25 to 30 minutes.
