1 whole baby snapper, cleaned and scaled, about 2 kgs
1 lemon, sliced
Sprigs fresh oregano
Sprigs fresh thyme
Splash of white wine
Salt
Freshly ground black pepper

Steps:

  • Prepare the barbecue for indirect cooking over medium heat (190°C to 230°C- roasting setting). If you are using a Weber Q barbecue, set up your barbecue with a convection tray and trivet.
  • Lay the snapper on a double layer of good quality aluminum foil. Make sure there is enough foil all around the edges to fold to create a parcel later.
  • Stuff the cavity with the lemon slices and sprigs of oregano and thyme. Then splash some white wine all over the fish, and season generously with salt and pepper. Wrap the aluminium foil around the fish, making sure the parcel is completely sealed.
  • Roast the snapper over indirect medium heat, with the lid closed, for 30 to 45 minutes until cooked to your liking or until the internal temperature has reached 54°C. The internal temperature will continue to rise 3°C to 6°C while resting (final doneness temperature for whole fish is 57°C).

Mr. Frazier is a personal chef and an avid outdoorsman; this rub is his go-to for highlighting fresh-caught fish, which he is serving for the holiday.

2 whole fish (1 to 1 1/2 pounds each) such as branzino, gutted and scaled (see Notes)
2 teaspoons medium-ground coffee
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons ground cayenne (see Notes)
1 teaspoon ancho chile powder
1 teaspoon ground cumin
1 teaspoon packed brown sugar
1 teaspoon fine sea salt, plus more to taste
3 tablespoons vegetable oil, plus more for greasing the grill
Lime wedges, for serving

Steps:

  • Prepare an outdoor grill or heat an indoor grill pan to medium-high, ensuring the grates are very clean. Using a sharp knife, score the fish with four diagonal slashes through the skin on both sides.
  • Mix the coffee, onion powder, garlic powder, cayenne, ancho, cumin, brown sugar and 1 teaspoon salt in a small bowl. Pat the fish very dry with paper towels, then drizzle with the oil and rub over the skin. Sprinkle the coffee rub all over the exterior and cavity of the fish and massage the seasoning into nooks and crannies.
  • Oil the grill grates or pan. Place the fish on the hot, greased grates, and cover, if using a gas grill. Grill, turning once, until skin is browned and crisp and the flesh is opaque, 5 to 6 minutes per side. The crisped skin should naturally release from the grate when turning and removing the fish. If it doesn’t, let it sit until it does. If it’s still stuck, carefully pry the skin off the grate with a spatula. Season to taste with salt, and serve right away with lime wedges.

  • 1. Preheat a gas or charcoal grill to a moderately hot temperature, about 400°F; if using coals, wait until they turn white-hot. 2. If desired, melt the butter in a large stockpot set over the grill or over moderate heat on a stove. Add the onion, crushed garlic, and a pinch of salt and pepper, sautéing until softened, 4-5 minutes. 3. Add the Old Bay seasoning and thyme leaves; cook and stir until fragrant, about 2 minutes. Stir in the water and bring to a boil over high heat. 4. Once boiling, reduce to a steady simmer and stir in the sausage and potatoes; return to a simmer and cook until the potatoes are just tender to the tip of a knife, 10-15 minutes. 5. Add the corn to the water and return to a simmer. Cook for 5 minutes and then remove from the stockpot and pat dry with paper towels. Set aside until needed. 6. Return the seafood boil to a simmer and stir in the crabs and lobster. Cover and cook for 10 minutes. 7. In the meantime, brush the corn with oil and season with a little salt and pepper. Place the corn on the grill and cook, turning a few times, until lightly charred all over, 6-8 minutes. Remove from the grill. 8. When the crab and lobster are ready, stir in the shrimp and clams. Cover and cook until the shrimp are opaque and the clams have opened, 4-5 minutes. 9. Add the parsley, lemon juice, and plenty of salt and pepper to taste to the seafood boil. Serve straight from the pot with grilled corn on the side and seafood boil sauce on the side. (See Tips for a seafood boil sauce.)
