These Gingerbread Men Cookies are as cute as can be. If desired, decorate with raisins, currants or cinnamon red hot candies for eyes and buttons.

3 cups flour
2 teaspoons McCormick® Ground Ginger
1 teaspoon McCormick® Ground Cinnamon
1 teaspoon baking soda
¼ teaspoon McCormick® Ground Nutmeg
¼ teaspoon salt
¾ cup butter, softened
¾ cup firmly packed brown sugar
½ cup molasses
1 egg
1 teaspoon McCormick® Pure Vanilla Extract

Steps:

  • Mix flour, ginger, cinnamon, baking soda, nutmeg and salt in large bowl. Beat butter and brown sugar in another large bowl with electric mixer on medium speed until light and fluffy. Add molasses, egg and vanilla; beat well. Gradually beat in flour mixture on low speed until well mixed. Press dough into a thick flat disk. Wrap in plastic wrap. Refrigerate 4 hours or overnight.
  • Preheat oven to 350 degrees F. Roll out dough to 1/4-inch thickness on lightly floured work surface. Cut into gingerbread men shapes with 5-inch cookie cutter. Place 1 inch apart on ungreased baking sheets.
  • Bake 8 to 10 minutes or until edges of cookies are set and just begin to brown. Cool on baking sheets 1 to 2 minutes. Remove to wire racks; cool completely. Decorate cooled cookies as desired. Store cookies in airtight container up to 5 days.

Quick and easy gingerbread cookies recipe, made with 3 simple ingredients are a classic. This doctored cake mix recipe makes the best soft cut out cookies.

1 Egg (Large)
½ cup Butter (Unsalted, Room temperature)
1 package Spiced cake mix box
1 cup Royal icing or melted chocolate (Optional, For decoration)
1/2 cup Mini m&m candies (Optional, For decoration)

Steps:

  • Add the egg and butter in a mixing bowl and mix until thoroughly combined.
  • Sift the boxed cake mix.
  • Add the cake mix into the wet mixture and mix until just combined. Don’t over mix.
  • Chill dough for about 1-2 hours so that it's easier to handle. It also prevents cookies from spreading too much while baking and they hold their shape better.  
  • Roll the dough between two sheets of wax paper and use your cutters to cut out various shapes.
  • Bake at 350 degrees for 6-8 minutes or until the edges are firm and slightly brown.
  • Allow the cookies to cool down and then decorate them with royal icing/ melted chocolate and candies. Enjoy!
